This colorful side dish features corn, black-eyed peas, green peppers, and red onions, simply dressed with Pace Chunky salsa. It tastes VERY similar to some black bean and corn salsas. IT DOES FREEZE AND DEFROST just fine. There may be some extra liquid but you can just pour that right out.
A fabulous and trend setting salsa just right for tortilla chips or served as a complement to grilled, roasted, or sautéed meats or poultry.

A friend told me about a dip she made that was too easy to believe. Well believe it! This is the best dip I've ever had and takes no thought or skill. My guests finish this every time and I always get requests to bring it to parties. I like to use scoop shaped chips. My serving size is a guess since I can eat a whole batch of this myself. :) Enjoy!
From "Some Like it Hot" by Robin Robertson. Cook times are estimates and do not include the hour to "sit". I have removed the olive oil from this recipe to cut down on fat, but if you want add 2 Tbsp of oil to the mixture at the end before letting the dip sit.
I love this recipe, it has so much flavour, and whenever I'm asked to bring an appi, I bring this one. It has tomatoes, green onions, cheese, and best of all it's a dip that you use with tostito chips.
