This is real comfort food. A family favorite. If you can, buy the fresh mozzarella. You won't believe the difference and it's worth it. The texture isn't rubbery like the typical mozzarella. I got it from watching an Emeril show on the Food Network.

The recipe calls for spreadable chive and onion cream cheese. I used a portion of a softened brick of cream cheese and added parsley and minced onion. I would recommend the spreadable one instead. Even softened - it still was hard to spread. Very tasty though!
Yes, this is quick to put together, I guess that is where quick comes from, but then you have to marinate it for hours or over night. BUT it is worth it ;-) I serve it with cucumber tomatoes and chips.
Most of us make a lot of chicken dishes. This one is quick and easy, and full of flavor. It has been created for a Ready, Set, Cook contest. It uses seven RSC ingredients (two more than required), so you can omit the mushrooms if you are a non-mushroom lover. The timing is a little hard to calculate. Not counting the marinating (which I did overnight once and 8 hours for another time), I found that I could make all of the rest of the recipe within 50 minutes. But I was busy for a lot of the time.

I've had this recipe for years and it's one my family's favorites. Quick, easy but good enough for company. It is a very versitle recipe in that you can add any additional spices or seasonings to your own taste. I have tried to substitute olive oil for all of the butter, but it doesn't work for our tastes. I add a little olive oil to the butter because we do like the richness it gives yet not too overpowering. I use StoveTop stuffing mix and the parmesan cheese in the can. Also great for pork chops.
This recipe came about after months of experimenting, my husband (who usually dislikes boneless, skinless chicken) finally declared it "the one." Delicious and savory chicken breast marinated with garlic, lime and cilantro, grilled to perfection, and served over rice or salad. Healthy with a south-of-the-border flair.
When I was doing Weight Watchers and the boys were home, I got really tired of fixing 3 sets of meals each night. When I came upon this recipe - I just didn't tell them this was WW and to this day they still don't know. When the boys come home now - this is one dish they will request. Super fast & easy to fix on work nights.

*Note - in response to some reviews that experience the sauce being too runny or thin...extend the reduction time (after removing lid). It may take another 5-10 minutes to thicken and have the consistency you desire.
