These simply mashed sweet potatoes taste so good it's hard to stop eating them! It's amazing what just a little butter, sour cream and a few scallions can do without all the frills we usually add. Then again, the beautiful sweet potato doesn't need much help. These make a wonderful addition to a hearty meal and pair well with most meats, especially pork. I pre-bake the potatoes in the oven because I think they have the best flavor, but I included steps for cooking them in the microwave as well. The dish will take from 25 minutes using the microwave to 65 minutes using the oven, not counting the cooling period post cooking.

Deliciously moist low-sugar chocolate cake, made even more flavorful by the addition of coffee. This is from the Splenda site. Please Note: Splenda Brown Blend is 50% sugar and this recipe uses 1/2 a cup. That's 1/4 cup of sugar in the entire cake. 1/4 cup =4 Tbsp. Splenda Brown has 4g of sugar per tsp =12 g per Tbsp and 48g (1 2/3 oz) in the entire cake. The cake is intended to serve 10. That will give you 4.8g (or 1/8 ounce ounce or 0.169 ounce according to the converter on this site) of sugar per serving. Please decide for yourself if this recipe is safe for you. I, myself, am insulin dependent and I get a higher spike from two slices of 100% whole wheat bread in a sandwich than from a slice of this cake. If you are a brittle diabetic or sensitive to all sugars you may wish to avoid this recipe.

My BF is type 1 diabetic, so I adapted my tride and true apple crisp recipe and wow! You can't even tell! Great for low-carb diets too.feel free to add some finely chopped pecans to both the aplles and the topping. My family doesn't prefer it, but it really adds a nice crunch and balance. I added the reguar full-sugar option as well.

I needed an extra dessert for an expected dinner guest who is diabetic. After looking at recipes for a couple of hours, I found this one and it sounded yummy. My dinner will be next month but thought I would try it today to make sure it was good. It was very yummy and I will definitely serve it at my dinner. It's from Diabetic exchanges: 2 carbs (1 bread/starch, 1 fruit) 2 fat

This pie not only looks beautiful but is very delicious. My non-diabetic family wants me to make it every day. Came from I love strawberry pie and was looking for a recipe I could use. Be sure to use the directions in this recipe and not those on the jello box. And fresh strawberries work a lot better then frozen. Diabetic Exchange: 1 1/2 carb (1 starch, 1/2 fruit) 1 fat

This is posted in response to a request for a stew that was low in fat, low in high-glycemic carbohydrates, and high in fibre. I think this fits the bill.
