    Okay, the no-bake is misleading, as you do have to bake the pie crust, but this is so trouble-free, and tastes so darned good. It's decadence for a diabetic, and a special treat for those special events. This is being posted for the 4th of July [hopefully], but you can substitute any fruit topping you wish for this recipe. I've used fresh diced cherries, orange slices [blended in 1 box sugar free orange gelatin into the top mixture for this], lemon [same as oranges], pears [used lime with this], etc. Use your imagination and let the fruit complement the day. If you aren't concerned with sugar/carbs, try Comstock brand pie fillings on top!

    ADDITIONAL INFORMATION This is most excellent if you're a cheese cake fan! While this isn't a traditional cheese cake, this is a superior CREAM cheese cake recipe. It's home made cheese cake, but it's not New York style. It's Southern style and it has a wonderful lemony flavor. ABOUT THE ICING This is a very versatile recipe as you can finish this one off any way you like. You can use canned pie filling (any flavor), you can make a standard butter cream icing to drizzle over the top, or you can purchase a commercial cream cheese frosting, warm it in the microwave and drizzle THAT over the top. I like them all. *LOL*.

    This recipe has the virtue of being great for ANY fruit, ANY occasion. It's fine for everything! Just after a daily meal or on a special occasion, this pie is the BOMB! Not only is good with any meal, but you can change the pie filling flavor with no problems! You can even make one pie one flavor, and the second pie a completely different flavor! You can use any kind of crust you want, from two pre-baked pie shells to graham crackers with a little sugar and melted butter (like for the no-bake cheesecake you buy in a box mix). You can even use ground Oreo cookies for the pie crusts and a chocolate pudding instead of the fruit mix!

Change the fruit and type of nuts to suit the occasion. 1 family sized package of Jello, any flavor you like, prepare the jello using a matching fruit and juice for the water, and the "speed set" recipe on the box but DO NOT PUT IN FRIDGE! SUGGESTIONS * Orange Jello with Canned Mandarin Orange slices * strawberry Jello with frozen strawberries * lime jello with canned pears and marichino cherries * cherry jello with a good fruit thingytail * raspberry jello with frozen raspberries * blue jello with canned black berries or blueberries The 2 hours' cook time listed is mainly to allow the mold to set.
