This is a collection of recipes that I grew up with-I was born in Canada but I was raised in a traditional Danish home where Danish was out first lanquage and Danish cooking was the order of the day. This is just a start as I have posted many more recipes and will add to this cookbook as I come across them. I hope you enjoy some of my "memory" recipes

This is a very traditional Danish dish and one that merchant sailors love to make when they come off night watch and want a quick easy hot meal. It is so simple and very good. Great recipe for re-cycling left over roasts etc. Add some peas or some mushrooms, Any left over veggies. The egg is optional but don't miss out on it

Another Danish/Scandinavian recipe. Cardamom is in the ginger family and has a pungent flavor. These cookies will disappear quickly (Unless you don't like cardamom!)

    Recipe #13275

This dessert was traditionally served on Christmas Eve. It is easy to make. You can either buy Almond Macaroons or make your own Almond Macaroons

    Recipe #14558

This is a traditional Danish cookie/cake that is served at all festive occasions, Weddings, Christmas, Easter etc. It sounds like Ho Hum but it is truly delicious

These cookies are a staple in Denmark. I can remember at all the Ladies Auxilliary Bazaars these cookies were always there -in the coffee shop, for sale with other baked goods etc. Simple but very good

Traditional Danish Christmas cookie. They have a wonderful spicy flavor that stays with you long after you eat it - It's the taste of Christmas to me. Sometimes it is tricky to slice the cookies, especially if you did not wrap & seal them well, then they tend to crumble. Seal them well and leave them 2 weeks in the fridge and you shouldn't have any trouble

    Recipe #13614

It is an old Danish belief if a visitor leaves your house without being fed during the "Jul" (Christmas) season they can carry away the Christmas spirit. This is a quick easy, delicious recipe to help you keep the Spirit of Christmas in your house

Excellent Christmas recipe. I have made these every year since 1992 when I found the recipe in BC Woman to Woman Magazine it was credited to Mrs M.H. Wilkinson. I have not changed anything in the recipe it is excellent the way it is. For variety add a 1/2 tsp Almond extract orfresh ground nutmeg or finely grated orange peel. Try the original first tho you won't be disappointed

This is a true traditional Danish recipe. You need a special pan to make them but most gourmet kitchen shops carry these cast iron pans. The pan is round and has round indentations so you can cook 10-12 at time. This can be a breakfast dish (usual time ithey are served), brunch, late night snack or any snack time. Serve with bacon on the side or whatever. Just typing this I want t

This was a regular Sat night dinner served with good crusty bread. It has a heavier texture than a French omelet, more like a frittata. Good for lunch or Brunch I often use slivered ham steak on top instead of the bacon or the streaky pork - just a bit less fat

I don't know why I called this Danish breakfast! It 's loaded with calories and high fat but once in a while it's good to stoke up and this is very good

This is a real Danish tradition for Christmas Eve and is served as a first course. When the porridge is almost cooked you make a ceremony, with everyone watching, of dropping one blanched almond in the pot. Whom ever finds the almond in their bowl wins a small present (Chocolate Santa, marzipan figure whatever) The kids love looking for the almond and of course have to eat their porridge in order to find it - no cheating by stirring the poridge in the bowl

This cabbage goes well with pork. It is a traditional Danish dish. The caraway gives it a lovely flavor. You do not add any water with this recipe. It is cooked on the lowest number on your stove - there is enought moisture in thc cabbage that comes out as it slowly cooks. I cover the pot after adding the caraway seeds. Remember to stir each time you pass the stove. As mentioned by Swedish Chef in her review her MIL added an apple - I tried it and it is excellent. Thanks SW

This is my mother's recipe with a few adaptations by me. They are wonderful crisp white, sweet pickles that go well with anything You nearly always see this pickle on Danish open faced liver pate sandwiches. If you cut them in spears they pack really well in the jars. It is more traditional to cut them across in 1/2" slices..

This is a traditional Christmas Eve dinner served with sweet & sour red cabbage, glazed potatoes and new carrots. The prunes & apples are served as a side dish. You can start the first 30 minutes of roasting at 400F then turn to 375F for the balance of the cooking time. Your goose should not be over 10 lbs or it could be tough

This is a tradional Danish dish. It is a work up to make but well worth the effort. My Mother's Ladies Aux. would prepare this for their annual Bazaar (that's Bazaar, not bizarre) as a fund raising dinner for perhaps 200 people. It was a true group effort with one woman preparing the meat balls another the fish balls etc. There would be a great deal of interaction I can assure you Here are the two other recipes that you will need to make this wonderful meal recipe#12643 and recipe#12638

These are delicious and versatile. These are traditional in the Danish Mock Turtle soup. Serve them as an appetizer with a dip or make it as a fish loaf. Any way it is good In one of the pictures you will see that I made a sauce and fried them - these went over really well. They are wonderful in a curry sauce
