Cucumber Salads

I love cucumber salads for their ease and flavor. Just a few simple additions and summer's bounty can be elevated to a superb snack or side dish. Herein are some of my favorites (tried and true)and a few that I want to try soon. Let me know if you have one that should be added to the collection.

A great summer salad that is sweet and tart with a touch of heat. I prefer this chilled as I like the coolness to go with the spicy, but it can be served at room temperature. I got this from a cookbook that I have since lost, but it is a very easy recipe to remember. Time includes all prep, cooking and standing time, but not chill time.

A recipe from Lowfat Living cookbook-altered a little. Ideally, this should be prepared in summer when cucumbers are in season. The original recipe specifies one half cup sour cream (or yogurt). I replaced part of the sour cream with some olive oil.

Typical Salad from the Ivory Coast!For a pretty presentation scored cucumber and zucchini with a fork, not peeled. Onions are nice placed in between the layers.

This is a REFRESHING, tangy Salad--low in fat. If you want it creamy and not so low in fat, just add 2 tablespoons mayonnaise. Be sure to slice the cucumbers and onions very very thin! Serve as salad or top open faced sandwiches with it!
