    I wanted to create a tropical dessert using 5 of the 21 contest ingredients. This dessert is light and tasty, and the juices from the fruit add a tangy sweetness that does not require sugar. Toasted coconut and almonds add a bit of extra texture. This dessert has 3 main ingredient combos - a fruit mixture, a flour mixture and a topping mixture. Great ending to a picnic or bar-b-que with friends. Enjoy!

    Last year I received a crock pot cookbook with a recipe in it for pulled pork. It was nice but I thought the sauce it made in the pot was a bit too thin. I made several changes and am happy with this recipe so its time to share it! I sometimes have to water the sauce down now. The sauce/marinade can be made up to 3 days in advance and kept in the fridge until needed. Marinating time is not included. I make this in my 3 1/2 quart crock pot.

    Easily adapted for whatever you have on hand. I often substitute thighs for the breasts, regular brandy or apple juice for the apple brandy, and if you can't find Havarti Cheese, Gouda or Colby work well. If you have a newer model slow cooker, this will cook in 4-5 hours, as opposed to 6-7.

    This is a very good recipe for my son who is 2 years old. He isn't one for chicken, but will eat this. I put individual servings for him into the freezer so when the hubby and I eat something that we know he won't eat, I just pop this in the microwave. Very easy and satisfying.     From one of Gooseberry Patch's newest cookbooks ("Fall, Family & Friends") comes this very Southern recipe for Shrimp & Grits. Now I am not Southern (my DH is), but we both love grits. I do know this dish is very traditional in the Southeast. In a check on Amazon, I discovered a cookbook devoted ENTIRELY to shrimp & grits, can you believe it? This is an easy version to be made in the crock pot. Y'all, I haven't try it yet, but as soon as I find the grits (scarce here in the southwest) I'm going to -- DH can't wait!
