Vegetarian, colorful and made in a slow cooker. Very easy, even uses raw rice. Use all green or red peppers if you like. I use frozen corn instead of canned. Found the recipe on the internet, credited to Martin James in Copenhagen, Denmark.
Hey! My mom sent me this recipe- She and my dad loved it when they had it at a friend's Christmas Party last week. She had to add that yes, it has beer, but the alcohol burns off. She liked how it was flavorful but did not have a heavy ketchupy flavor. I look forward to trying it myself!
I make these for DH and friends for Football Sunday's. They love them. They are very easy to make and everybody can help themselves and add their own condiments. Serve with chips and plenty of cold beer! They are sure to disappear! I leave the green peppers out since I hate them! This is a great recipe to take to a potluck and can easily be doubled.
This is a really easy and good soup. Add more beef broth if looking for a very beefy taste and thicken up with cornstarch & beef broth. My family just loves this dish and ask for it frequently. The main thing to remember is to NOT STIR the soup until close to the end of cooking time.
