    I've been making this same apple pie for years -- very basic. This pie is crammed with apples, not too sweet and a crust that's easy to make and tastes good too. If your apples are really tart, increase the sugar to 2/3 cup. I've taught a few people first-hand to make this pie, (exactly as I have the instructions here, although some folks make their apples up a couple of hours ahead of time), and they've all said that it was really easy as long as they went step-by-step and didn't get into a big hurry. And the secret to this easy crust is CRISCO. I've tried cheap shortening before in a pinch and it just doesn't work for me. I've tried lard too but I don't like the aftertaste. Also, I don't bother to sift my flour -- I just use it straight out of the bag and I never have a problem. So, have fun with this one -- it's a good recipe to get teens involved with if they show some interest in cooking because this pie comes out of the oven looking so great even when there are big "patches" on the crust.     I'm always asked to share this recipe, and people are often surprised to see how similar the ingredients are to their own recipe. While the ingredients may be similar to other posted recipes, the technique is the key to this outstanding potato salad. The specific ingredients are important, too. Russets absorb the flavors best, but don't hold their shape well. Dicing them after they are cold, and folding the other ingredients in gently, takes care of that problem. Don't skimp on the mayo and other dressing ingredients. The potatoes will absorb a lot of moisture, and you want a creamy salad. Another key to flavor and texture is the very fine chopping of the onion, celery and pickle. You want the flavors to disperse throughout the whole dish, but when you take a bite, you want to bite into potato, not an onion chunk. For smaller apetites and crowds, you can halve the quantity easily. In Louisiana and other states where they serve Cajun food, potato salad is often served with gumbo.

    This is a really simple way of making nut brittle, without using a candy thermometer or doing any of the stage tests. A trick that I use is to line the cookie sheet with parchment paper so there's no sticky stuff to pry off and then wash up.

    Burgoo is a stew made with a variety of meats and vegetables and is a Kentucky tradition, often cooked in large pots and for events and barbecues on open fires. Who knows the origin of the word burgoo, it could be from a mispronunciation of the word barbecue to a mispronunciation of bird stew, but the origin remains a mystery.
