    Anyone who grew up in Utah will remember buying these Cookies at ZCMI...they were the BEST cookies, but ever since ZCMI was bought by Macy's they haven't been available. This recipe was posted in the August 13th 2008 Salt Lake Tribune and I thought I'd post it here for anyone else who remembers these wonderful cookies!

    This cookie is so cute!! It is perfect for summer reunions or bbq's. It is courtesy of Betty Crocker and is yummy too! The recipe doesn't call for it, but one reviewer suggested sprinkling with yellow sugar once completed to send them over the top! If you are in a hurry (as I was) just use a refrigerated peanut butter cookie dough instead, but I have posted as originally shown. UPDATE: as per photo shown, I ended up making these into sparkly colorful butterflies which you can do by omitting the stripes. I used icing sugar to frost, and then sprinkled with lots of diferent colored sprinkles. I could only grab these two before they were gone! Also, I found them a bit cuter with longer antennae's. We had a peanut allergy so I used sugar cookie dough and they tasted wonderful!!

    Again another one of my Grandma Clark's recipes our family LOVES. It is at almost every family gathering. I have used 'store bought' icing before and it works OK but I prefer to make my own powdered sugar icing. This is a LARGE recipe and my servings are a guess as my family eats the cookies before I can count. I often half this recipe to make a more manageable number of cookies.

    My grandpa taught me how to make these authentic Dutch windmill cookies, using his wood cookie forms that have passed through the generations. Today, they can be made into any shape you like, using cookie cutters.

    There are similar versions to this cookie, but I truly think that if you make mine like directed, you will find that these are the best. They will melt in your mouth. This has been a recipe used in my family since I was a little girl. We always made them for Christmas and weddings, but they are good anytime. The key is to use butter and make sure you grind the nuts very fine. I use my Kitchen Aid grinder attachment, but you can also use a food processor. Other versions use just chopped nuts, but I think when they are finely ground that makes the difference. Another important step is to bake them at 250 degrees for 45 minutes. Again, the other versions don't do this, but I stick with my recipe and am never disappointed. The extra time is worth it! This recipe will probably make 100 balls, depending on how large you make the cookies. The baking time listed is just an estimate. It will vary depending on how many cookies you make and how many you put on a cookie sheet. You can fit quite a bit on a cookie sheet because they really don't spread much.

    From, The Totally Cookies Cookbook. The original recipie doesn't call for cornstarch. I read somewhere, that for a chewier texture, you need to add cornstarch, so I always add 1 tsp cornstarch to this recipe, and I never have leftovers. It's great to have on hand especially during the holiday season or special occassions. Keep a log in the fridge or freezer, and make a few at a time in your toaster oven. Yum! Preparation and cooking times will vary depending on how many batches your oven will fit. I always double the recipe because they go so quickly.
