    Posting for ZWT 5 as we zip through Spain so might as well make this educational AND entertaining: Coffee was once believed to cure consumption, dropsy, gout, and smallpox; AND--get this!--when mixed with milk--as in this recipe--coffee was believed to be a CAUSE of leprosy! Oh, no! :rofl: I think we've proved through many years of not-so-scientific daily coffee-drinking that this is not true.     Breakfast will NEVER be the same once you've tried these little gems! Excellent as leftovers the next morning, too, with a dab of butter. The original recipe came from a Reiman publication (Taste of Home?), but I'm never happy leaving a recipe as-is, gotta do my own thing.

    Don't be put off by the long list of ingredients and directions...one thing at a time. Well-worth the effort, you'll reap garlands of praise for this one. HINT: Buy one 8-oz pkg cream cheese and divide as needed. YOO-HOO: Cooking time does NOT include cooling and chilling time--plan accordingly. :-)

We'd scramble for our shoes and our wallets, and off we'd go.     Over-ripe bananas lend flavor and moisture to these lovely breakfast muffins while the mini-chocolate chips sprinkled across the top entice the most bleary-eyed slow-poke into fully waking up! Assemble dry ingredients the night before, to speed up the process in the morning. *My dad used to wake my five brothers and me up by hollering up the stairs every morning, "Daylight in the swamp!" OR "The swampsoggins are out!"....we never did see a swampsoggin!!!*

    Time saving tip: Gather a hand-ful of quart-size zipper bags. Haul out the dry ingredients and measure & sift into bags. Label bag "Pancake Mix" and store in a cool, dark cabinet. At meal-time, combine one bag with wet ingredients. Make up a bunch of bags at once, breakfast will come together that much quicker! The original for this recipe came in the box with a blender we received as a wedding present back in 1978. I've tweaked it into solid breakfast perfection!

    As soon as these cookies come out of the oven, pour a glass of ice-cold milk, and give yourself permission to eat a couple. The anti-oxidants in the double dose of chocolate will be good for you! If you leave these in the oven too long--no problem, call them "Crispy Choco Chocolate Chip Cookies." No one will complain!
