If you like spinach, you will like this easy, comfort food type casserole. The addition of the lemon and nutmeg helps give it a nice, fresh taste. It is important to squeeze as much liquid from the spinach as possible. I sometimes use a leftover croissant to make the breadcrumbs. This goes nicely with a Caesar salad.
This is a great recipe that is simple and inexpensive to whip up for a large crowd for breakfast. Serve with coffee, toast, maybe some fresh cantelope and your done! Recipe is easily reduced for a smaller crowd or for a romantic breakfast for two. :)
From the Sweet Potato Queens book. Goes REALLY well with Death Chicken. Can use cream of onion soup to make this vegetarian. Not sure on the yellow rice package size - I just grab the one that "looks right."

Every time I go to my fave Chinese restaraunt I HAVE to eat this crab casserole. I love the flavors, the texture, heck ... I just love everything about it except for the fact that it makes me wish I had a second stomach just so I could eat more!) At first I didn't think there was any breadcrumbs in it. My MIL said there is. So, I went and bought a bit of it and pulled it apart bit by bit and found there was indeed some breadcrumbs in it.

This colorful dish is not only packed with nutrition, it's a feast for the eye, and incredibly delicious to boot. Feel free to substitute any root vegetables you prefer. This is an enhanced version of the first meal I ever prepared for my boyfriend 14 years ago, and he still thinks longingly about it! I use all organic ingredients in this. It would make a great side dish to roasted chicken, or a one-dish vegetarian meal on its own.
Lasagne is a firm favourite with everyone. Unfortunately, with all that pasta, creamy sauce and fatty beef, it can be a huge meal. My version replaces some of the pasta and meat with vegetables, and compared to an additive-filled, processed version, this is much better for the waistline. All the Italian purists that I know will be up in arms, but for me this is a great dish that leaves me feeling full of energy.
My DH was feeling nostalgic for foods of his youth. After an online search (and some tinkering) we came up with this winner! Ore-Ida Crispy Crowns work better than plain old Tots if you like this crispy.
