    This is a mostly vegetarian burrito that I came up with using mild green chiles. I love the textures and flavors and it's light with the filling's main ingredients being zucchini and black beans. It is easy to put together and you can make it totally vegetarian or even vegan by substituting the cheese for your favorite veggie cheese and using meatless green chile sauce. Hope you enjoy!!

    I found this recipe in the weekly issue of American Profile. I couldn't find a recipe like this here on Recipe Zaar. A lot of similar ones and I have one in my cookbooks, but I wanted to add this one. The directions call for reduced fat or light but of course I didn't do that(cause we just don't do that in our house). I would put more in each tortilla as there was too much remaining sauce. Also didn't add the jalapeno peppers in recipe for my 6 year old. My husband and just add them to top of enchilada before eating. I also cut back on the fresh cilantro. :) I also added a bit more chicken. I buy the pre packaged chicken in the lunch meat isle.

    This spicy guacamole goes GREAT as an appetizer with chips or as an accent to main dishes, such as fajitas, etc. The jalepenos really give it a spicy kick! I find it best to buy avocados when they're green and ripen them myself. The credit for this recipe goes to my sister. It took a LONG time for me to get this recipe from her; hope you enjoy it.

    A fresh tomatillo salsa that is very easy to make using a blender. I dislike cooked tomatillos for two reasons: they lose their lovely green color and the texture to me is unsatisfactory.     I don't remember where I got this recipe (Cook's Illustrated?) but it's a great basic gazpacho. This soup is very simple; after all the chopping you can just toss everything in a bowl and mix.
