    Pecan Balls - Mom made these at Christmas time.. but I think they're great anytime!

    This recipe will make two pans of the most delicious flaky buttery shortbread and may I add these travel well for shipping ;-) --- using a food processor insures that you will have a very tender flaky cookie, plus they take only minutes to make, these may be made up to 2 weeks in advance and store at room temperature in an airtight container, but they won't last that long lol! and they only get better with time! If you are using unsalted butter then increase the salt to 1/4 teaspoon --- make certain to slice the cookies while it is still warm and then cool completely --- while the baked cookie dough is still warm you can cut into small shapes or circles if desired --- you will *love* these!

    When fall rolls around, I find I have a craving for my mom's stewed apples. She never followed a recipe, but would somehow always manage to whip up the most flavorful apples you ever tasted! In an effort to recreate my mom's stewed apples, I came up with this recipe. We would usually have this as a side dish with supper, replacing applesauce. However, it would also be delicious served as a dessert with vanilla ice cream or over gingerbread or pound cake with a little whipped cream. I hope you will enjoy it!

    This is my favorite Cornbread Dressing I use for special holidays. I make my own white bread using my bread machine and my own Skillet Cornbread to use in this recipe. If you prepare the bread ahead of time, you can freeze them until ready to use. I really like this dressing. It is easy to do and has a great flavor. I like to add fresh mushrooms to the mix.     My all time comfort food. It is not a Yorkshire but just as good I think. But you must not beat in the eggs or flour. It should be really lumpy and "eggy" looking before cooking. Use lots of Pam spray if not using non stick pan.
