    Christmas Eve Buffet

Recipes appropriate for an informal buffet-style Christmas Eve dinner. The tradition is to go to church, come back and eat, then do a gag gift exchange.

Dried Beef / Chipped Beef Cheese Ball
    Handle

This is my most requested recipe. We have it at every family function, and it always goes fast. I often double the recipe, making one really large cheese ball. I got this from my mother, who got it from an old cookbook. It really is simple and delicious. You will never want to make another cheese ball. Enjoy!

    Flourless Peanut-Chocolate Cookies (Martha Stewart)
    Handle

These cookies come from the marthastewart.com website and are really, really tasty. They are sweet, chewy, full of chocolate and nuts-the perfect treat. As written the cookies come out very sweet, so feel free to reduce the sugar amount or use a sugar substitute for part of it.

A lovely dessert tart! I used Pepperidge Farm for the Puffed Pastry tart, another two recipes for the filling and Dancer's Chocolate Almond Sauce #5331 for the sauce on top. It made for a fantastic combination!

This is the recipe I have been using for Macaroni and Cheese since the beginning of time! Truly a classic and a staple on our family table. I hope you enjoy it as much as we do. A great side dish to be served with my Meatloaf Barbecue Style!

    Roasted Carrots With Gremolata

Gremolata is a classic Italian seasoning mixture of parsley, lemon rind, and garlic. In this dish, it really enhances the fresh carrots. This doubles easily. Adapted from Country Living magazine.

Camembert Baked in the Box With Garlic
    Handle

I got this recipe from a Nigel Slater cook book but when I made it I altered it to include chopped garlic as I think it makes it nicer. Really nice although Camembert can be a bit smelly!

Roasted Whole Sweet Potatoes With Maple Ginger Topping
    Handle

Adapted from Southern Living magazine. I used to eat a version of these at a steakhouse in Louisiana and was happy to find a recipe that comes very close. I added my own additions to the recipe to make it come closer to what the restaurant served. You may use light sour cream, reduced sodium salt, reduced calorie margarine, and sugar free maple syrup if necessary - I have made these both ways with success. Elegant enough to serve to dinner guests, and recipe doubles easily.

    Recipe #91021

    Barley Mushroom Parmesan Bake
    Handle

Make certain to use only pearl barley for this. This can also be made on top of the stove. The mixture will thicken even more upon standing or refrigeration. My family loves this dish, it's a nice change from rice, hope you enjoy also! Add in the saffron, it really makes a difference in taste!

Wonderful in a sandwich, as an appetiser (served with crackers/cocktail bread), or just eaten as a salad. It's an original recipe I've been making for years. Prep time is estimated. The egg was already hardboiled :) Cook time is fridge time. Yield is @ 4 hardy sandwiches, @ 40 appetisers or @ 3 good sized salads

    Chicago Italian Beef
    Handle

You'll be sorry you didn't grow up in Chicago, and eat one of those wonderful beef sandwiches from Carm's. This tastes identical. This wonderful recipe came from my sister Linda knowing how homesick I am for Chicago food. Start cooking 18 hours before you want to eat.

This is great for brunches, especially with ham, the way cranberry sauce is good with turkey. My mother has always made this.
