Great recipe to have for brunch with perhaps some creamy scrambled eggs.

    Recipe #98105

I came up with this salad one night from some fridge leftovers and was very pleased with it. It works well as light main course, but will serve up to four as a side. It's great to make the night before and take to work for lunch too, since the flavours improve after the salad sits for a while. I like it best with the spicy chorizo.

A salad that can be a main meal as easily as a side dish. If you have potatoes leftover, it's very quick to make. You can also speed things up by purchasing jars of roasted peppers, rather than roasting them yourself.

Chorizo is a chile-garlic flavored sausage much loved in Mexico and the American Southwest, but most of the commercially-available kinds are made with beef byproducts (such as salivary glands) that don't appeal to many folks. Here's a great recipe that uses ground pork, instead. It is a fresh sausage, so cook it thoroughly. It's highly flavored, so a little goes a long way. It is convenient if it is wrapped and frozen in small packages. Chorizo can be used in many ways! For breakfast, saute it and add to scrambled eggs. Fry up some chorizo and add some beans and spices, or grits or potatoes. Add it cooked to your burrito or taco fillings. It also is good to add cooked to a red chile sauce, stew, or any other dishes you'd like to have a nice Mexican flavor.

This recipe is from our local newspaper. The original recipe called for 24 U-10 jumbo shrimp.

    Recipe #119716

From the New Zealand magazine Foodtown. Cooking time is poaching time of sausage.

My Husband and I have this in one of our favorite Portuguese restaurant. Make sure you have some Portuguese bread to dip into the yummy, salty, garlicy juices.

    Recipe #95936

Russell created this from leftovers last night. It was really good, and a nice light sauce for a warmish night.

Spicy Southwestern inspired take on your typical stuffed mushroom. Can be an appetizer or even a main dish for a light supper.

This is the best con Queso dip I've ever had. I got it from a great cookbook by a man named Grady Spears. I guarantee once you try this you will be a fan of his too.

This recipe is a tapas or appetizer.

Lovely fresh tasting pasta dish. Serve with a salad and garlic bread. So quick and easy!

    Recipe #85843

This is a simple but very filling Spanish potato and sausage stew. The chorizo and paprika give this a lovely smokey flavour, so for the best results you'll want to search out those two ingredients. Otherwise, you could add in any number of vegetables. Try corn, carrots or green peppers. The kind of chorizo to use in this dish is the raw pork sausage, not the variety that is more like a deli meat.

    Recipe #48874

This makes a lovely dish for brunch and adds a Spanish twist to the traditional quiche.

While driving truck over-the-road, I used to stop in Moriarty, NM. A gentleman (called BURRITO MAN') would come in the truck stop every morning with freshly made (sausage, beef, or potato) "breakfast-burritos", hot and ready to eat. Drivers loved them. Moriarty was a stop I always looked forward to! A lot of us got to know "Burrito Man". He is a very special person. Although my ver

This is a very flavorful soup that is a comfort food for my family. The recipe was given to me by my Portuguese mil over 30 yrs ago. Her mother had passed it on to her. This soup is easily stretched to make more servings. The Chorizo gives the broth a good base for adding another can of beans or more pasta or a little water. Soul warming for a cold night, serve with a warm crusty bread. A great next day soup. Freezes well.

I've made this a couple of times, to rave reviews from my family. It's really easy to make, it's tasty and hearty, and makes the shrimp go a long way.
