    This was the other main dish at my Chinese New Year's party. Several guests declined a second chopstick load and requested large amounts of water, others went back for thirds. Depends on how much you treasure the continued existence of your taste buds...and don't be scared by the long ingredients list, they're all simple and easy. Serve this alongside something savory, follow with something cool and sweet, and vary the marinade and number of chilies according to taste. I used long, skinny 'pyro peppers' in this version. Oh, and try to resist the temptation to turn the heat down -- high heat is important to a quick stir fry, though it does make the chilies and chili oil quite pungent.

Also, this does take a while to make, but it's worth it. One problem with these enchiladas is that they're high in sodium, but you can easily leave out some salt or reduce the amount of sauce you put on the chicken.

    This recipe recently appeared in our local newspaper. We tried it and loved it! It's a great tasting and easy recipe to make, especially for camping. The hot chili paste gives it a nice bite but, of course, we added more than the one teaspoon called for in the original recipe. We served it with grilled vegetables and garlic bread.

    This results in exceptionally moist and tender chicken, with the bonus of being a complete meal. The veggies get bathed in the chicken juices, resulting in an easy, delicious one-pan dinner. It's low-maintenance once it's in the oven too; no basting, no fussing. You may want to add extra garlic cloves in the pan; after roasting they're sweet and delicious and taste great when squeezed out onto the chicken meat or potatoes. Do try the parsnip in this dish, rather than the more traditional carrot; the parsnip gets very sweet when roasting and goes so well with the chicken. This dish is easy enough for weeknights, spiffy enough for company!

    This is a gorgeous dish, with quite a delicate flavour - if you're looking for a traditional Chinese-style black bean stir fry you should probably look elsewhere. Canned black beans are the easiest for this recipe - you only use a little, the rest of the can goes into the freezer for next time. Alternatively, if you have a few hours you can get some dried black beans from the asian grocer and reconstitute them - I haven't tried this yet but don't think it would make any difference to the end result.     Simple recipe = tender chops. Takes minutes to prepare. Double the recipe for 4 persons or make it for one - very easy to adjust the recipe. For seasoning I used Penzels 4/S salt and Black & Red spice (thanks Susie) but you may use your favorite mixed spice or just salt & pepper
