    Bourbon Chicken
    Handle

I searched and finally found this recipe on the internet. It is a copycat of the Bourbon Chicken sold in Chinese carry-outs in my hometown. This recipe is so good that my sons gobble it up leaving me just a spoonful. Their excuse was they thought I had eaten.

Grilled chicken skewers popular in Japan. Chicken thigh meat, green onion, chicken liver, hearts, gizzards, chicken skin can be prepared this way. It tastes best cooked over charcoal. Mirin is a sweet Japanese sake (rice wine). Ordinary sake may be substituted for the mirin, with additional sugar. Translated from Shinkatei Hyakkajiten Vol. 1, Kodan-sha, 1967, with adaptations by me. The garlic is from a suggestion from a person selling this by the side of the street. Use standard American cups. Please use a roomy saucepan for the sauce, as it has a tendency to boil over. Watch both sauce preparation and meat grilling carefully.

    Teriyaki Sauce
    Handle

Have you been trying to replicate the Teriyaki sauce they have in Japanese restaurants with no success? Well, this one is for you then. This sauce is great with fish, meat and vegetables, especially anything crispy (e.g. grilled crispy-skin salmon, chicken wings, etc.). As it burns easily it's best added at the very end of the the cooking process or even after cooking is completed. Can be used as a marinade but you will then have to make sure it doesn't burn while cooking. The sauce can be kept in in the fridge for quite some time.

    Lee Lum's Lemon Chicken
    Handle
    2 Reviews |  By Charmed

This recipe is from Craig Claibourne's New York Times Cookbook, and I think it's one of the best recipes I've ever tried. It looks beautiful, I love the flavors, and in my opinion, well worth the work. Don't leave out or substitute for the whole bottle of lemon extract added at the very last second; it's what makes the dish. If you cannot find water chestnut flour or powder, you can substitute cornstarch. However, the texture will not be as crispy or nutty.

This came from Gordon Ramsay's book, Fast Food. I found a video of him preparing it on the internet and had to try it. I've made a few changes, substituting some things for what I've had on hand, but it turns out absolutely delicious either way. It can be served with mashed potato or rice, it's very versatile. I like to have a fair bit of sauce to work with, so I don't reduce it as much as suggested.

Southern Fried Chicken (Look out Kfc!) (Paula Deen)
    Handle

Thanks Paula Deen (FoodTV) for the best fried chicken I have ever made! It has a nice, savory flavor and a coating that has just the right amount of crispiness. It was a good thing I had an extra cut-up chicken in the refrigerator because my family was begging for it again the next day. Although it calls for what seems like a lot of hot pepper sauce, it isn't any spicier than Jack-In-the Box's Spicy Crispy Chicken--you can take it!! FYI I made this using 10 pounds of wings--enough of the hot sauce/egg mixture to cover, but you will need to double flour mixture if you want to do this much. I'm not saying it tastes like KFC--only that you won't be doing business with them anymore.

Picatta has never been simpler to make. Using cubed chicken makes it easy, economical, and diner friendly. This recipe is great served over pasta along with some garlic bread for a wonderfully elegant dinner. You can use veal or shrimp in place of the chicken if you like.
