This recipe was found on About.Com on the Spanish Food section. Here is what was stated: "Garlic Lemon Chicken is a relatively easy chicken recipe, which has two of the essential Mediterranean ingredients - garlic and citrus. Pieces of chicken are first sautéed in olive oil, then baked in a garlic chicken broth with white wine and slices of lemon. Serve with potatoes or rice."
I love churrasqueira chicken and have been looking for a recipe to make it myself. I found this on Breakfast Television Toronto's web site. They got the recipe from Roasty Chicken Churrasqueira which is in the town of Maple just north of Toronto. A friend told me that she's used this sauce for fish and shrimp, too. I've tried it on shrimp and it's wonderful. Simply marinate the shrimp for an hour and then drain the shrimp, discard the sauce and grill the shrimp on the barbie.
My husband and I learned to make this lemony chicken entree on a cooking vacation in Italy. The recipe is very quick and easy, yet bursting with flavor and tenderness. The sauce is made by whisking a beaten egg into the reduced liquids. We love it served over a side of pasta to soak up all the lemon-wine sauce.
From Rock's Recipes made popular via Pinterest with small changes. May substitute boneless pork, but may need to increase cook time. Update: 6/18/12 I totally agree with Charmie777 that the egg wash and flour ratio to breast is too much. I'd cut that in half.
This is not really a recipe, it is more of an idea. BUT, it is easy and you do no cooking at all ! In the USA, Rotisserie Chickens are available at most large supermarkets and at restaurants like Boston Market. If you can't get one you can slow cook boneless chicken breasts until they can be pulled apart. Number of servings depends on the size of the chicken and size of sandwiches.
Easy to put together on a busy weeknight, with plenty of passive cooking time. A new staple for us! The rice does get pretty "soggy" so if you are someone who likes individual grains of rice, this is NOT the recipe for you.
Another winner from the Pioneer Woman. I love that I can have these sandwiches on the table in 20 minutes. It's also a very flexible recipe; you can choose your cheese and your sandwich toppings. Delicious with mayonnaise & dijon mustard, and lettuce & tomato.
This is a moist and flavorful light lunch or dinner recipe. The flavors pop in your mouth with the first bite! It's my adaptation of a recipe I got from Cooking Light May 2010. Hubby requests if frequently, that's how good it is! We sometimes serve Parmesan Orzo on the side.
