Don't expect a fine dining recipe -- this is rustic, comfort food for the busy cook, which will fill the kitchen with its fragrance as it roasts! I make this dish at least once a week or ten days, and always heave a sigh of relief when I've shoved the entire dinner into the oven in one go and can leave it to cook itself, while I do something more interesting! A salad is all I make as an extra. The vegetables can be substituted with any others, as long as they will roast satisfactorily. I don't like roasting carrots, for example, because they can come out still chewy. The veggies used for Mediterranean roast dishes are best, but use what you have available. As I cook for two, the breast part of the chicken will always be left (we prefer legs and wings) and is very useful for a chicken salad, or chopped up and used in a pasta topping. Note that quantities given are basically for 2 people, so adjust quantities for more, and cut down on the variety because there won't be space in the roaster!!

I found this recipe in a Betty Crocker International cookbook. It has quite a bit of flavor has a good crunchiness on the outside. It is Pakistani inspired. I hope you enjoy!

Baked chicken wing appetizers with a fruity pineapple-orange based sauce. Very good! Great for parties and sports get-togethers.

This is the juciest, best flavored roasted chicken I have ever made, or ever eaten! I have been experiementing, and It has turned out with the exact same wonderful results 3 times in a row now.. so I'm confident that anyone can make this with the same results. Never again will I purchase a pre-cooked rotisserie chicken! It's so easy too!

This is a great way to "fry" that chicken without all of the splatter on top of the stove. A good recipe, and I think it is good cold too.

A tasty oven chicken recipe, that is easy to prepare and a hit with company

Yummy BBQ chicken with out the actual bbq!!! Best of all, while cooking in the oven, a nice, comfy, homey aroma fills the entire house...great for summer AND winter!!! YOU ONLY NEED FOUR INGREDIENTS (includes the chicken, of course!) Kiddos LOVE this! For a quick, home-made meal serve with mac n cheese and green beans:)

This is THE most AWESOME grill marinade I've ever tasted in my life! I don't know where my Mom got this, but there is no match that I've ever known of...it is simplicity and freshness, yet rich, robust and succulent! I haven't told you this one yet, because I was entering it in a grilling contest for a Weber grill, but I can't hold back any longer! It is wonderful for chicken breasts and also for lamb. My Mom used to make chicken and lamb kabobs with this marinade and we always wanted more!!! NOTE: Prep time does not include the 24-48 hours marinating time. UPDATE: My grill has died....So in desperation to taste this chicken again, I tried Bobo3039's suggestion about baking it in a 350 degree oven...Results were wonderful!!! (Still missed that charcoal essence, but one must "roll with the punches" and make do...In this case, Bobo3039 was right on the money!)

A very flavorful and attractive dish. So easy if you have a large ovenproof skillet. Just transfer the whole thing from stove top to oven.

    Recipe #60320

This easy but elegant entree first appeared in "Quick Cooking" magazine. Someone posted this at the Somersize website, which is where I found it. I usually have this over a bed of fried spinach or zucchini ribbons.

This is a recipe I got from my Aunt Rose, nothing fancy just plain and simple. Chicken comes out moist

The sauce in this dish is unbelievably delicious! If desired, mushrooms or artichokes can be omitted. This will become one of your family's favorite chicken dishes.

People love this sesame chicken. It tastes as close to the restaurant version as I think you can get. It is from about.com I found this a couple of years ago on that site, and BF requests it a tleast 2-3 times a month. it really is great, and although there are a lot of ingredients, it's basically simple to prepare.

This is another great way to make something great ahead of time to thaw as needed or eat right now with little effort!

My recipe for "baconated" (bacon-marinated) Southern fried chicken. The bacon fat helps the skin cook up crisp, and seal in the juices. The whole eggs compliment the bacon flavor perfectly, and lend a crispness to the breading. Try it... you'll love it.

Love balsamic vinegar, hope you enjoy this chicken. Note; I have found that it's better with boneless, skinless chicken breast or boneless, skinless thighs. Baking time may be less due to size.

These buffalo chicken breasts are as good as buffalo chicken wings without all of the mess.
