I am pretty sure someone has discovered the KFC secret recipe! It is DEAD ON plus it's also baked not fried and there isn't any skin! So you get to enjoy the taste of the seasoning with every bite.

My recipe for "baconated" (bacon-marinated) Southern fried chicken. The bacon fat helps the skin cook up crisp, and seal in the juices. The whole eggs compliment the bacon flavor perfectly, and lend a crispness to the breading. Try it... you'll love it.
Serve this grilled dinner family-style on a big platter, and let everyone help themselves. You can marinate the chicken up to 30 minutes, if desired. *Cook time does not include marinating the chicken*
From Leanne Ely's book, Saving Dinner (Fall). Serve with garlic mashed potatoes, steamed broccoli, or baked sweet potatoes. The seasonings are relatively mild. You could probably safely add any seasoning left over after sprinkling breasts to the pan without it being too spicy.
This recipe comes from the restaurant "Brennan's" located in New Orleans. No one has to know how simple and quick it is. I posted this recipe exactly as it was in the book, however, if you like a little "heat" please feel free to add some cayenne pepper to taste.
There are many different versions of scarpariello; some, like this one, call for sausages, making this dish a hearty mainstay in our household. The recipe calls for fully cooked italian-flavored chicken sausage but I often have a hard time finding this at my local grocery store, so I typically use italian-flavored turkey sausage. Just remember to cook it before adding it in. I found this recipe in a family circle cookbook.
Now, to me this really isn't a recipe, but I was telling a friend how I make shredded chicken for recipes and she said I should post it. It always comes out tender, and has frozen well for me. I usually make double at once for oamc since it is so easy.
