It looked so good I began searching on the web for a recipe which approximated it... and after much browsing of webpages I put together a recipe that I thought might taste something like it.     I got this recipe from a recipe card many years ago and have enjoyed it ever since. It is simple, reasonably quick to make,low fat and tasty. You may substitute apple juice for the wine.

    I needed something quick for dinner last night, and so created this on-the-spot -- inspired by a garlic chicken recipe I read in a cookbook, which used whole chicken pieces, skin and bone. Plus I wanted to finish off my bag of panko so I could go buy a new one. I was so pleased with how this turned out that I intend to make it regularly. Panko are japanese bread crumbs and they are highly superior to any other type; please try to source them out for this dish rather than use regular dry bread crumbs. The "international" or "ethnic" aisle in your grocery store should sell panko; if not, complain to the manager!

    My mom had an incinerate setting on her oven. That is how she cooked meat. I thought that all meat was some form of carbon based life form, because that is what it tasted like. I have made it my mission to find ways to serve moist and flavorful meat. This is an inspiration born of too much time on my hands and needing to feed picky eaters. If I attach the word Pizza to any recipe it is guaranteed at least a try! The chicken is breaded, topped with spaghetti sauce, vegetables, pepperoni and cheese. It is a tasty combination.
