It seems I always have some left-over chicken in the fridge. This is a collection of some of my favorite recipes to make use of all that chicken.

I've never made this, or had it for that matter. It sounds interesting to hubby and he's dying for me to make it so I thought I would share it with you.

This recipe was given to my mother many years ago by her best friend Joanie. It's an ooey gooey cheesey chicken casserole. It's easily my favorite of all my mom's recipes and has become a staple in my home as well. I have received countless compliments and requests for the recipe and I'm sure you will too.

Another Keno dinner! Laura made this for our group a few years ago and we all begged for the recipe. I have made it several times and I prefer serving it with rice. Easy dish to prepare for someone in need.

Not gourmet by any stretch of the imagination, but still surprisingly good especially for a rushed weekday night.

I created this when DH was a student at BYU. He still looks forward to it being on the menu to this day! It is inexpensive and hearty. Timing is approximate.

Our family favorite chicken divan recipe! I've been making this yummy recipe for years. We really love the touch of lemon and curry-- it's simply divine!!! Make mine with extra cheese, please. May use chicken or leftover turkey. Serve over hot cooked rice. Recipe is originally from my father, but I've tweaked it to suit my family's tastes. I hope you enjoy!

This was one of my mom's recipes. It's a little bit different than those already on 'Zaar, but every bit as good. Sometimes, if I'm in a rush, I'll use cooked chicken breast strips (found in the refrigerated meat section) . I prefer white meat. That being said, you can also "tear up" a rotisserie chicken if pressed for time. My mom used to poach boneless chicken breasts. Any way you make it, it's "good & tasty" (as per my mom's notation). Note - prep time does not include cooking the chicken.

This is a very creamy recipe with a bit of crunch that my friend gave me. It's soooo delicious and I'm always asked for the recipe. I've doubled it for potlucks. You could save time by using a 3 pound bag of boneless skinless chicken and cooking it ahead of time. Why not pop the chicken into your crock pot to cook while you are at work? When you get home, you just assemble and bake! Your family will ask you to make this again and again. Try it and I think you'll be pleased.

The fresh flavor burst of lemon perfectly accents the chicken and angel hair pasta in this quick and easy dish. Serve with a generous topping of Parmesan cheese and a tossed green salad.

This came from my roommates 1977 Better Homes and Gardens All-Time Favorite Casserole recipes book. I haven't tried it yet but it sounds pretty good to me...

My mom got this recipe online a few years back and bribed me to make it. (She's a disaster in a kitchen!) We all fell in love with it. Very easy to make comfort food.

This came from an old church cookbook. I've tweaked it over the can make this vegetarian by not using the chicken and it is equally good!
