    I found this recipe in Better Homes and Gardens magazine. It won in their prize tested recipe section. I make this all the time and people always ask for the recipe. I always improvise with this. Sometimes I add mangoes, cucumbers and/or romaine hearts. This is easy and tastes like you are a chef.

    This is my version of Chicken Cordon Bleu. Just a bit different. I love the original recipe, but didn't like it with a bread coating every time. So for me, the gruyere adds just a notch up, the hickory bacon and then a simple mustard white wine sauce makes a very elegant dinner. Serve with some very simple wild rice or rice pilaf and green beans. Nothing fancy needed for this. VERY Classic eats.

    This is not at all difficult to make --- although you can use uncooked bacon strips I prefer to semi-cook the bacon in the oven first just to release some fat but do not cook until crisp or wrapping it around the chicken will be impossible --- the chicken may be prepared up to one day in advance, which makes this great dinner party food, just cover refrigerate and mix up the sauce when ready to bake :)

    Chicken recipes that are quick and easy sometimes are not as tasty as we'd like. I created this one a long time ago after picking up a ton of Pringles chips on sale for 88 cents a can at the local market. I got one of every kind. When I put them away, the barbecue flavored was pushed to the far corner and sat there forever.     I found this on the back of a bag of frozen chicken breasts. There were five things I liked about this recipe; it was easy, it is weight watchers core friendly, it smelled great cooking, it was tasty, and I didn't have to remember to thaw the meat. I served this with some brown rice and some steamed corn. The whole family enjoyed it. I included the marinade time in with the prep time. And my chicken was pretty thick so I ended up flipping my chicken 2 more times and broiling an additional 3 minutes each flip. The cook time I noted is per package directions.
