    This is such a good recipe. The chicken really turns out moist - but not falling apart - and full of flavor. The Asian chili paste kicks it up a notch and adds a nice twist. A good recipe for working moms: prepare the chicken in the morning and throw it in the oven when you get home. It'll just be getting done after you've had a chance to sit down, kick your shoes off and have a glass of wine. Note: The recipe does not state whether to cover or not but I do, and take the cover off the last 20-30 minutes or so.

    This chicken is so tender that it falls right off of the bones! Herbes de Provence is a wonderful spice to use on poultry, fish, and veggies (even potatoes). This chicken can also be roasted in the oven, but I prefer it cooked in the crock pot -it is more tender and flavorful when it is slow-cooked.     This is for serious garlic lovers. The chicken bakes out so moist and tender! Grated cheese may be sprinkled on top of the breast the last 5 minutes of cooking if desired but that is optional. Double all ingredients for more than four breasts and adjust the amount of garlic to suit taste. For the coating amount you might be able to get away with 5 or maybe 6 very small chicken breasts, but I would suggest to increase the amount slightly --- to take this dish to yet another level, about 10 minutes before the cooking time is finished, drizzle the top of the chicken with a little pasta sauce, then sprinkle mozzarella cheese on top. Return to oven for about 10 minutes until the chicken is completely cooked and sauce is hot and cheese has melted. For a lemon-garlic flavor add in 3 tablespoons lemon juice to the melted butter/garlic mixture --- *NOTE* for a healthier alternative Smart Balance Butter Blend may be used in place of the melted butter --- you will love this chicken!     Great to have on-hand for recipes. Just Place as many chicken breasts as you can fit into your crock pot as long as the lid fits on properly. I use bone-in, skin-on but I'm sure boneless, skinless would work too.
