If you used 1 cup of already processed walnuts you'd get much more. I didn't have cupcake holders so I lined shot glasses with plastic wrap to make these.     I was just wanting to try to make something new and this is what I threw together. You can't taste the spinach AT ALL. Tastes very limey - add coconut milk if you have it to balance it out if you want. -------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------------What's great about this pairing is that the ascorbic acid, the vitamin C, in the limes helps the body absorb the iron found in the spinach. Without vitamin C mixed with the spinach, the human body only takes 20% of the available iron in the spinach! Drink up!

These use almond meal or almond flour instead of regular flour so they're "meatier" than regular pancakes.
