    From Mark's Daily Apple! You can use shrimp or fish too! When I made this I found out that you don't want to try this was partially frozen chicken - your meat has to be completely thawed. Also the coconut cooks very fast so it helps if your meat is already cut up into bit sized pieces so the coconut doesn't burn while the chicken is still raw on the inside.

I believe this recipe uses dried ones though :( Ani, in her blog said she taught, "a holiday raw cookie making class for kids at a Joy Shop in Culver City, Los Angeles, CA.     I am obsessed with eating young coconuts right now (the kind that are white on the outside [it's the husk]) They're filled with tons of coconut water, much more than the harder, mature coconuts.     This goes great on pitas or Lavash, chicken or fresh vegetables. Yum! I was trying to find a substitute for Trader Joe's Spicy Feta Dip because my family will no longer buy it because it contains canola oil. This is not as thick and clumpy due to the fact I put it in the blender. I'll try to give the closest measurements I can because I made it by just throwing things into the blender.
