    I can't vouch for the authenticity of this dish as actually being South African but I can assure you that it is different and delicious. My mom's vegetarian friend brought this over to a potluck Christmas lunch when we were kids. Naturally as a family of serious carnivores we were suspicious of "vegetarian health stuff" and to say that us kids were fond of eggplant would be a gross understatement! We hated the stuff! So it was only under extreme pressure and outright threats from mom that we tasted this just to be polite. The fact that I am making this some 25 years later tells you that it's good. Vegetarians surprise your carnivore friends with this tasty side dish every time. Oh and by the way it's goes great with a roasted or stewed lamb! LOL

    I received the original recipe from a close friend's mom who makes it for every holiday dinner. I took the original and tweaked it a bit to suit my tastes by adding garlic, nutmeg, cream cheese and the variety of cheeses. By the way, the leftovers (which I can eat hot or cold) make a FANTASTIC omelet filler or pizza topping. I have had this as a side dish with duck, turkey, chicken, ham, roast beef, meat loaf and pork ribs. It seems to meld with anything and everything. For a Greek variation, add some feta cheese to the mix. This low-carb dish is also a great crock pot recipe, just mix all the ingredients together and heat on low for 8 hours.

    I found tomato onion pies in 2 cooking magazines, and put them together to make this outstanding side dish! This is very filling, and goes well with just about any meat you make it with. It is also a nice for brunch along side breakfast meats and egg dishes. This pie is anything but bland, with big sweet onion and tomato flavor. It is good with other flavors of cheese too. I sometimes buy cheese blends, or mix cheddar with mozzarella. If you can't find Vidalias, use a Texas Sweet or Walla Walla Sweet onion. If your tomatoes are still too juicy after chopping, place them in a colander to drain while you chop the onions and cook the bacon. This will keep your crust from getting soggy on the bottom. If your oven browns the edges of pie crust too quickly, wrap the edges of pie crust with foil before baking.

    The vegetarian meatless ground beef is so easy to use to make into a tasty casserole that even a meat lover like myself will enjoy. I am just beginning to use these meatless products. This is the third casserole that I have put together. Make it more or less spicy - it's up to you. The soup does have cream in the ingredients. Nice to serve with dry fried onions on top. I served this casserole with mashed Turnip & carrots, boiled new potatoes. It would also be nice served with noodles or rice. If you wish you could add cooked rice or cooked noodles right into the casserole before baking.
