    There are more refined names for this very old stew from the cattle country such as son of a gun stew or S.O.B stew, but the old cowhands preferred this down to earth name. In the old cow camps of the Southwest when an animal was slaughtered out on the range to feed the hands, the first night a stew was made of the innards. In those days the stew was put into a cast iron pot and buried in coals. A Dutch oven or heavy kettle or large heavy frying pan with cover will do. You need to know your guests’ tastes before serving this. It’s good, usually, for a stag party, either a crowd of sportsmen or card players. Use all of the various kinds of variety meats—or omit any you care to, or can’t find in your market.

    I found this in Southern Living several years ago and make it often, especially when bringing a meal to someone. It freezes well which is good since the recipe is much more than my family can eat. I usually make it either in 2 2qt baking dishes or 3 9x9 pans for freezing and add a little extra cheese on top. Light sour cream, lowfat milk and Healthy Request soup work well for a lower fat version.

    This is pasta packed with flavor. The dry salad dressing mix gives it that extra punch. It has only 4 ingredients, so it falls into my favorite cooking category - quick and easy! I got this from Quick Cooking magazine and modified it a little. The original recipe called for only a 16 oz jar of garlic and onion spaghetti sauce, but I use any flavor of sauce and increased the jar size to 26 oz.
