This is a spicy and healthy alternative to many mexican dishes. I am repeatedly asked to make this over and over - especially by my dog sitter. I will admit - it is one of my favorites and easy to vary since most ingredient amounts are approximates. Excellent with corn bread or pudding and a crisp salad

I got this recipe from Robin Miller's Quick Fix Meals. I have made this several times and my husband loves it. And it is so easy to make! I usually just buy Tyson's ready cooked chicken breast strips (two 6oz pkgs) pre-seasoned with southwestern spices. I sometimes use multi-grain flour tortillas, when I can find them in the store.

This is a Pampered Chef recipe that I received via email. "A fun twist on lasagna that starts with enchilada sauce and corn tortillas to create a quick microwave casserole." Cook’s Tips: This recipe can be assembled up to one night in advance. Prepare through Step 2; cover and refrigerate. When ready to serve, let baker stand at room temperature 15 minutes. Microwave, covered, on HIGH 21-23 minutes or until hot. Proceed as recipe directs. Spicy enchilada sauce can be used for more kick. Great quick and healthy dinner.

From the 2003 Penzey's holiday catalog. "Holiday gatherings bring family and friends together to share conversation, laughs, and a good meal. If you find yourself in a rut with your veggies, making the same thing every year, try this casserole for a change." Posted by request.

Another comfort food from my childhood.

A nice way to enjoy parsnips; especially for those who have never tried them.

My husband and I love this recipe. Everyone I have ever served this to has asked for seconds. To speed up prep time the bacon can be cooked in the microwave. I have even reduced this recipe to 1 serving and baked in a mini loaf pan. Sometimes for a little different taste I use shredded mexican cheese in place of the cheddar cheese.

This is one of my husband's and father's favorite version of Jambalaya. It is low fat and good for people watching their diet. This came from a Low-Fat, Good-Food cook book

    Recipe #136858

A creamy, spicy(but not too spicy!), Mexican chicken casserole! My family loves it and requests it often! I serve it with a green salad tossed with fresh avocadoes. Note: cooking time includes cooking chicken.

    Recipe #135929

This is delicious. An elderly lady friend of mine gave it to me and i thought it would be a nice one to share.

I like to serve this as a side dish with pork. At least something gets eaten on their plates.

Instead of crumbs, bake without any topping and then add strips of crisp bacon on top.

    Recipe #124305

This is a recipe from Peg Bracken's I Hate to Cook book. Really easy and quite good

    Recipe #116646

There are a lot of chicken casseroles out there but this is the best I've ever had. My kids love it too. Freezes well (let thaw and then bake) and works well for a covered dish meal. I like to serve it with cranberry sauce on the side. And as a reviewer suggested, I have heard of people adding chilies to this recipe. I usually broil my chicken. The results are much tenderer than boiling it. Thigh meat can also be used if you prefer.

From a former co-worker at the hospital I use to work in Louisiana. Every get together we knew to bring and make copies of our recipes because everything was always so good!

    Recipe #88960

This is great to prepare the night before, cover with plastic wrap, store in the frige and bake the next night after work. I don't remember where it came from and then of course it evolved as time passed. Before the computer, I didn't keep records, I kept notes, without a filing system.

    Recipe #75953

My mom used to make this dish. It was one of my childhood favorites. I love the dill weed in it, and I add extra, just my taste. This is very good with pork roast or baked chicken.

    Recipe #75617

Served this at Christmas last year and my whole family loved them. Have been asked to make them for every family occasion since.
