    Here's a fabulous one-pan paella that I've created using my favorite, scallops! You can easily change it up and make it your own by subbing shrimp and/or chicken, for the scallops. Feel free to adjust the seasonings to suit your taste. Note: I didn't measure, so recipe amounts and times are just a guideline. Enjoy!

    An old family favorite--- comfort food at it's finest! This one includes potato chips as well as hard-boiled eggs. Just like mom used to make. Mom used to reheat leftovers in a frypan with butter the next day--- yum!! P.S. Sometimes I sprinkle mine with grated Parmesan cheese, at the table.

    Elegant, quick, and EASY casserole that is good enough for company! A favorite of mine--I could eat this several times a week LOL! From my mother. Over the years, I have tweaked the original recipe to suit my tastes. Hope you like it as much as I do! (Note: you may add a dash or two of celery salt, or "Beau Monde" seasoning, to the soup mixture for extra 'ooomph', if you like, but it is excellent as written.)

    I've had this enchilada recipe for ages, and make it often. It is my husband's favorite casserole.:-) Wonderful! I usually double the mild green chiles, and use light sour cream and "healthy request" soup. Note: My family prefers these enchiladas made with corn tortillas, but feel free to use flour tortillas. ENJOY!!

    Our family favorite chicken divan recipe! I've been making this yummy recipe for years. We really love the touch of lemon and curry-- it's simply divine!!! Make mine with extra cheese, please. May use chicken or leftover turkey. Serve over hot cooked rice. Recipe is originally from my father, but I've tweaked it to suit my family's tastes. I hope you enjoy!

    Creamy chicken and veggies nestled in a fluffy cloud of mashed potatoes, topped with melted cheese, true comfort food at it's finest! A simple and easy recipe, this casserole can be assembled in advance and popped into the oven an hour before serving. Serve with warm buttered biscuits. Enjoy! Tip: The hot mashed potatoes are especially tasty prepared with chicken broth in place of water, and cream cheese in place of the usual milk & butter.

    True comfort food at it's finest, and one of our all-time favorites! Perfect for a chilly autumn or winter's day, and goes great with a glass of cider or Guinness. Recipe is from my sis-in-law Ellen, who happens to be married to an Englishman. I hope you enjoy as much as we do!

    A simple version of Chicken Cordon Bleu! Chunks of chicken and ham layered in a casserole with shredded cheese and a creamy white sauce, topped with buttery crunch and baked to golden perfection!     This is such a wonderful lasagna recipe! Very hearty and delicious with nice deep layers, plenty of meat and cheese, and just the right amount of seasoned sauce--- plus it's a great way to sneak some veggies into your family's meal!! Very easy to prepare, and any leftovers are great reheated the next day. Equally good with chopped spinach or zucchini.

    This casserole tastes exactly like Eggs Benedict without the last-minute struggle. Just assemble the English muffins, Canadian bacon (or ham) and eggs like a strata and refrigerate it overnight, then all you have to do in the morning is microwave the Easy Microwave Hollandaise Sauce recipe #121586 to pour on top (I like to double the sauce recipe for this casserole, as it's so yummy!). Granted, the eggs are not poached, but the flavor is just as awesome. Serve Eggs Benedict Casserole with fresh strawberries, orange juice and coffee. Great for Mother's Day, or other morning feast. From the newspaper. Note: Be careful not to overcook. If using a glass dish, you may want to reduce the baking temp to 350 degrees F, or reduce the cook time slightly. Ovens vary.

    Here's an absolutely scrumptious sweet noodle or lokshen kugel that's great as a side dish, snack or for breakfast. One of grandmother's best kept secrets. To serve cut the kugel into small squares and enjoy either warm, cold or at room temperature. Note: The nutmeg and cinnamon are to taste (I use half a pinch of nutmeg and about one teaspoon of cinnamon). Hope you enjoy!

    A delicious hassle-free breakfast casserole! I love to serve this to my overnight guests, at Easter or anytime. Easily assembled the night before and refrigerated overnight, then popped into the oven in the morning! Some optional add-ins are cubed ham or breakfast sausage, and broccoli or bell peppers. Serve with fresh fruit and coffee or tea, add sides of warm scrambled eggs and toasted bagels with cream-cheese and fresh strawberry preserves, if desired, to round out the meal. Enjoy!
