I originally found this taco casserole recipe in a Taste of Home magazine. Since then, I have made this recipe at least 50 times. I love it because the ingredients list isn't complicated and, based on the layers, I can readily remember all ingredients when I am at the store without my recipe card. I have served this for myself and had wonderful leftovers or many times I have made it for company with a nice green salad to accompany it. I hope you enjoy it as much as I do.
This is one of the first recipes I really "mastered" when I was learning how to cook. My husband got to enjoy this recipe at least twice a month because it was one of the few dishes I knew how to make. Now, that I'm a much better cook, we still have this delicious dinner on our menu at least monthly. It is so easy to put together and very good. This wonderful casserole combines everything you need for a well-balanced meal with the terrific taste of Chicken Cordon Bleu. Great for guests or for a potluck as well, as kids and adults both seem to like the combination of flavors.
This is an adaptation of 2 different recipes my mother-in-law used to fix. I took part of each one and added them together one day when I didn't have all the ingredients for just one.Also, I had 3 of my grandchildren the day I made this they loved it. There were no leftovers. .
This recipe is in about its third or fourth generation, passed down from Grandma to Mom to Me. It became my children's favorite, and now my grandchildren love it. It was a staple in each household, with or without the hamburger. The children named it "Belly Buster" because they always ate too much when we had it. Freezes well.

I got this recipe from a friend when looking for something different to serve for a holiday brunch. We like ours with fruit and honey. Goes really well with cheesy ham cups that I've also posted. The prep time is putting it together along with refrigerate time.
A friend of mine brought some of this into work for me to try and I had to get the recipe. It's delicious! I submitted this exactly how it was given to me. I used thin spaghetti (my preference), melted the cream cheese almost all the way before mixing with spaghetti, mixed the ground beef with tomato sauce before layering (by mistake).
