    Getting the kids ready and out the door in time for the traditional Lutheran church's Christmas Eve Children's Worship Service is made MUCH easier with this recipe on hand. Get things ready ahead of time, make a loaf of garlicky French bread, and before the little whipper-snappers have time to realize what's happened, you've eaten a healthy AND festive supper, AND are STILL out-the-door in time for church to hear the story and sing the carols of the Birth of Our Savior!     This simple casserole version of chicken chow mein makes great use of leftover chicken or turkey and is easy on the budget and your time. I don't measure or weigh the amount of chicken I use but the original recipe calls for 3 pounds so I've left the recipe that way. I just use whatever I have left over, or I'll stew a few chicken breasts or pieces if I'm starting from scratch. If you've got 2-3 cups of chicken you'll be in good shape. For a little extra kick add some red pepper flakes. You can easily cut this recipe in half for a smaller family.

    This is a delicious warm casserole that our mother made for us growing up. It is very easy and inexpensive with just a few ingredients that I usually have in my cupboard. I have modified it to be healthier and most ingredients can be swapped for lighter options. We always serve it over wild rice, it really adds to the dish.

    This is one of my favorite dishes from my childhood. My grandmother would make this dish often and as a teenager I loved it. Although it is traditionally served as a side dish for any type of meat I usually eat it all by itself as a meal. I just season it with black pepper and red pepper and find that it doesn't need any additional salt. The soups are salty and I use salted butter so no need to add more. To me this is the epitome of comfort food.

    This recipe uses no crust. You could if you want to though. It's a comfort food that will warm you innards up! You can add most anything to it. The mushrooms you can use fresh or canned. I like the fresh. Seasonings are to taste. Try more or different seasonings too! Try a different cheese. Try adding some left over ham or crumbled bacon to the dish too. Note: 15 minutes of the cook time is included in the cooking time.
