Refreshing Mojito by the Pitcher Mojitos
    Handle
    107 Reviews |  By Rita~

This is a refreshing Cuban drink. It's hard to stop drinking these on a hot summers day. I made these for the fourth of July and we went on to 3 yes 3 pitchers! If you don't have a muddle stick try a mortar and pestle or the end of a wooden rolling pin. Please use fresh lime if you cannot go ahead and try the already bottled lime juice but if you do think about that when you rate this recipe! I did both and there's nothing like fresh! Same goes for the fresh mint if you need to you can use frozen but I DON'T recommend extract. And for the sugar real granular is what helps muddles the lemon and extract the mint oils from the leaves.

    Coconut Green Curry Brown Rice

    1 Reviews |  By Rita~

Terrific accompaniment to many Thai dishes, such as fish and curries or Caribbean fare. Washing off excess starch will result in lighter, fluffier rice) I don't measure with measuring cups my liquid in the rice cooker I use my thumb the amount of liquid should be one digits worth above the rice. BUT if not sure follow directions.

These are savory fritters filled with pineapples, habanaro, chives, garlic, turmeric and are very addictive. Serve as an appetizer, top some grilled meats, seafood or a side to a salad. Diced red pepper mix along the pineapple would be very good in this as well.

Caribbean Rice in a Rice Cooker
    Handle
    10 Reviews |  By Rita~

This side or a vegetarian main is loaded with flavor and texture. I made this in a rice cooker if you Add more water will increase the cooking time and produce softer rice; reducing the amount of water will produce firmer rice. But once you've found the ratio that's right for you, it'll be very easy to have perfect rice your way. Yes you can make stove top as well. Be sure not to remove the lid till done cooking.

Is a traditional base to many latin-style dishes. The building block mixture of annatto, onion, garlic, peppers, and cilantro adds a wonderful flavor and depth to almost any meal. This freezes well and can be used throughout the year. Can be put into ice cube trays then removed when frozen and place in freezer bags.
