    Capers

    Capers are immature flower buds which have been pickled in vinegar or preserved in granular salt. Capers have a sharp piquant flavor. Have an aroma and saltiness to dishes as pasta sauces, pizza, fish, meats and salads. The flavor of caper may be described as being similar to that of mustard and black pepper. Capers are popular in Mediterranean recipes.Goes well with olives, argula, anchovies and artichokes. Capers are said to reduce flatulence and to be anti-rheumatic in effect. In ayurvedeic medicine capers improve liver function. Capers have reported uses for arteriosclerosis, as diuretics, kidney disinfectants, vermifuges and tonics. Capers contain considerable amounts of the anti-oxidant bioflavinoid rutin.

    Escarole is a bitter green, I just love it. This is a good introduction if you never had it. The raisins sweeten it. The beans give it a nice richness. The vinegar cuts down the bitterness and the salty capers and anchovies makes for a dish with lots of flavor. The optional ingredients are for those that are not vegetarians. Do rinse the beans, anchovies and capers well to remove excess sodium.

    You 'll have no problem impressing a crowd with this elegant buffet dish! Lightly browned chicken with a sauce of sundried tomatoes, mushrooms, capers, green peppercorns & fresh herbs bedded on baby spinach which mixed with sauteed onions and garlic. Topped with toasted pinenuts. You can cut down this recipe. If you want serve on a bed of rice for a more elegant meal or place on a tortilla and wrap for more casual meal.

    This I've been making for years and it 's never ever the same. This year I used balsamic vinegar and sundried tomatoes which brings the basic caponata up to date with our changing tastes. This if your are not familiar with this appetizer (relish) dip or spread it 's salty, sweet, tangy has lots of texture from celery, eggplant,onions, garlic, olive, capers, and pine nuts. This is very complex! Serve it on fresh Italian sliced bread or crackers or as a relish on a sandwich. You can even toss it into a small pasta to make a pasta salad. Check out recipe #103124. In years gone buy I did can in boiling water bath for 10 minutes.I like to jar and give as gifts.
