I wanted to preserve my Recipe #97531 and came up with this. Adding the lemon, lime juice and vinegar for acidity to preserve the salsa. Green tomatoes can be used in place or along with the tomatillos. After opening the canned salsa you can drain some of the liquid so not to watery. Do NOT thicken with flour or cornstarch.
FYI- don't like heat replace the hot chili's with bell pepper that you roasted.
My DD went apple picking and brought me a nice bunch of organic apples. This can top ice cream waffles, pan cakes, french toast. Make an apple pie with it or stuff puff pastry with it. Pour it over a hot ricotta cheese cake.
I had a friend that told someone one time that I would make jelly out of corncobs if it was possible. Imagine her surprise when I told her that I had found a recipe. I made this just to prove that you can make jelly out of corn cobs, but it is so good that I will be making it every year from now on. It taste like a mild honey and people request it often.
The root contains highly volatile oils which are released by enzyme activity when the root cells are crushed. The whiter the root, the fresher it is. Keep the root chilled to preserve the heat. Vinegar stops the enzymatic action of the processed root and stabilizes the degree of hotness. Keep the horseradish chilled after making and seal as soon as using.
Add at the end of cooking to keep as much heat for the dish.

This can be made in 1 pint jars making 7 of them. I go for 1/2 pint because for gifts they go farther.
I do recommend wearing gloves. This is sweet & spicy so beware. This is great served over cream cheese.Try adding it to your favorite barbecue sauce for a little extra kick. Spread it on your sandwiches. I've added it to salsas.
You can also make this with jalapenos and green bell pepper to get a milder jelly.As in the picture.

This salsa has a slight twist to it! Why Smoking? Besides the heat from the hot peppers you have a smokey flavor going from the chipotle peppers. Then optional for those that like it real hot use ghost chilies. This makes nice little gifts, just pack a basket with it and some chips, avocados, cheese, beer or margarita mix etc.
