    Hurricane recipes for all of us that are dealing with storms this season, and camping recipes too. My cover image is an impromptu "Hurricane Frances" salad we put together with whatever was in the fridge. We ate it in the dark. Remember your parmalat, canned meat and velveeta (if you can stomach it), water, and some form of bread. Get some propane for your grill and a french press for some tasty coffee (and grind that coffee before the power goes out). Instant rice and canned beans are good, and PB & J works too.

    This is a favorite of my Boy Scouts that graduated as Eagle Scouts from BSA Troop 47, Littleton, Colorado when I was their Scoutmaster. We challenged the Scouts to do one “gourmet” dish for each campout, and this was my “example” entry to spur them on to doing more than just beans and weenies. They got the idea quickly and not only changed what they were cooking [for the better] but how they prepared and cleaned up their creations. I have one Eagle Scout that is now an award winning chef working in NYC, largely because of his experiences while camping and earning the BSA Cooking Merit Badge.

    The quintessential Mediterranean street food--I lived off these as a student in Malta, and I've been tweaking my recipe to match the flavors I remember. I think I finally nailed it down! Note, please: It is important to use GOOD lemons, because if your lemon juice isn't top notch quality, this just won't be as good. Also try to use fresh pitas (either from a deli or make your own!)--old pitas aren't as flexible and won't be as easy to work with. Prep time does not include overnight marination/sauce making time.

    This is not so much a recipe...but a GREAT idea...and if you have ever had a kid who played ball, this IS your basic Little League Ballpark food. These are great for the kids when they have sleep overs. They also make great "hand held" food for football games in front of the TV!!!

    this is the best way we like to have corn on the cob. the corn finishes cooking in the butter and seasoning, instead of adding them afterwards. it's also really easy to prepare as a side dish at a bbq, since you can do all the prep. ahead of time, and then just place them on the grill. we use greek seasoning, but i have used a variety of spices, be adventurous!

    This is a fun and tasty snack you can make when camping or around an outdoor fire from Andreas Viestad of New Scandinavian Cooking. The dough is rolled up on a stick and baked over an open fire. Make sure not to bake the bread directly in or over the fire, as that will char the bread without baking it. Great recipe for kids!

    Okay, this is a much-beloved SECRET PARK RANGER RECIPE that I've used for years, impressing campers at my park as well as family and friends. This version (below) is the one I use most often but I have also offered alternatives, in the directions section of this recipe for all tastes, kids and adults alike. For this unique recipe, you will need either a charcoal grill or a small campfire. You will also need a campfire pie or sandwich baker, (also called pie irons), which you can easily find at Wal-mart in their outdoor section, or, at any outdoor supply store. They come in both square (sandwich) and round (pie) versions -- you can use either one with equal success. These babies are so delicious, fast, and easy that they're certain to become a family favorite at home or on camping trips which your kids will surely pass down to their own kids some day. The recipe screams out for substitutions and variations so have a lot of fun with this one!
