    I am posting this in response for a request on the boards for a recipe to use up some mangoes. I made this yesterday, but the original recipe had way too much sugar, so I've adjusted the recipe to the way I will make it in the future.

    This is my grandma's oatmeal cookie recipe. Once she got a deep freeze there was always a coffee tin full of them in the freezer. Every afternoon around 3:00 or 4:00 my grandpa would come in from the fields and she'd pull a couple of them out to put on a plate for them to enjoy with their afternoon coffee. I've now passed this recipe on to my daughter who was named after her too. A definite heirloom recipe. These are a crunch cookie so full of nuts and coconut that they are like eating a bowl of granola or oatmeal in a cookie.

    I was on an RV road trip from Seattle to Santa Fe, visiting friends in July 2000. We were invited to dinner at our friend's father's house. I certainly couldn't go empty handed, but i didn't bring any dessert recipes with me. I did have the current issue of Taste of Home, i hadn't read it yet, but it saved me! I found a recipe that i would be able to modify enough to make in the RV. I took it to this beautiful outdoor dinner party. Every dish there was elegantly presented. Until i set down my disposable roaster pan! I didn't know what to call this dessert, and hoped no one would know who brought it, and that's when i realized that the "wonderful Tiramisu" everyone was raving about was mine! The name stuck, and i've made it the same way ever since (although I usually present it in a glass trifle bowl). I'm sharing my very easy version with you here. Enjoy!

Years later, a woman brought a tray of these to the office, which I instantly recognized as THOSE COOKIES FROM MY CHILDHOOD, and she refused to give me the recipe (said it was her babysitter's secret recipe)!     A family recipe I've made for years for dozens of people. Only one hasnt liked it sofar. Coconut floats to the top and crisps, while pie makes its own very good crust. Serve while warm, it will fall apart if cut hot. (oh, and use flaked/shredded sweet coconut in the bag)
