This recipe makes a nice bundt cake that almost tastes like a pina coloda. It's light and mild tasting with a surprise glaze. But anyway, this starts out with a cake mix made rich with sour cream and eggs. Layers are created by a delicious swirl of brown sugar-cinnamon goo, and a vanilla icing on top. My grandmother gave me this recipe and I was intrigued by the fact that a box of cake mix was part of the ingredients of this recipe. They turned out fabulous! This was so easy to make and the dough turned out tender with a deep rich taste (I was shocked because there are no eggs or oil in this recipe). I wanted to have these for breakfast, so I prepared them the night before and let them sit in the refrigerator over night on the last rise. In the morning I set the pans out for about an hour so they could come to room temperature and then baked them according to directions and they turned out perfectly.
My mom passed this recipe along to me. It is easy to make and has been a big hit at home and at the office. I get frequent requests for the recipe. It is very moist and delicious and makes a good breakfast cake as well as a dessert. Increase nuts by another 1/3 cup if you like nuts!
These are so much fun to make at Christmas. Simple and very creative way to take 2 round cakes and cut them into eight wedges to resemble Christmas trees. Insert peppermint stick into bottom of each cake for the tree trunk.
A co-worker gave me this recipe. You can use any flavor cake mix and icing you choose. My preference is lemon, but I have used a red velvet mix and tinted almond bark with green coloring for christmas. You must refrigerate cake mix in order to roll into balls. I find it is easier to work with half of cake and leave other half in the freezer while dipping. Have fun experimenting with different flavors.
I like to get creative with boxed cake mixes. It's more convenient and less time consuming than making cakes from scratch. The mayonnaise in this cake makes it really moist. You cannot tell the mayonnaise is in it. Since mayonnaise is made with eggs and oil, there is no need to add oil to this recipe and it uses less eggs. Instead of the 3 large eggs the directions on the cake mix box calls for, this recipe calls for 2 large eggs.
