    This is a great dish for a weeknight because you can quickly mix up the ingredients and pop it in the oven for an hour while you do other things. I love that it is very versitale and does well with substitutions and differing amounts. If I don't have cottage cheese, I use ricotta or if I have a little left of each I will use both. I've even used up leftover mexican cheese instead of the mozzarella and it still tastes great! My mom used to make this recipe every couple of months when I was growing up and it was always such a treat. I was pleasantly surprised to find out how easy it is to make! Sometimes she made it in a pie crust and of course that was even better! I enjoy topping it with crumbled feta when I have some in the house. I hope your family enjoys it as much as mine!

    Garlic lovers and health nuts only! This single serving recipe is an extremely simple, yet flavorful variation on scrambled eggs. The cottage cheese adds a moist texture and the garlic gives it great flavor. Both spinach and garlic have wonderful health benefits (antioxidants, disease prevention, high vitamin content) and egg whites are a wonderful source of protein so it's a great way to start out your day! (Try adding cooked diced potatoes once and awhile - it's fantastic!)

    This is from a Pennsylvania Dutch Cookbook. I used to make this as a little girl in my mom's iron skillet. I made it with a very good friend of mine and she still talks about these today. They were a lot of fun to make since they really bubbled up in the oven and of course it helped that we got to put butter and sugar all over them!

    This is a simple old Hungarian dish. It's easy to make and requires no special cooking skills. I use smoked paprika, but ordinary paprika powder was what was used. For the sour cream, I also like using crème fraîche. But no matter: taste, and adjust things to your taste. The paprika is the mild, sweet type and the dish is inoffensive in all ways! A pleasant dish which suits all tastes! I DO recommend using bone-in, skin-on chicken, because the taste is simple better. Best made a day in advance because the flavour improves on standing, but also suitable for tonight's meal! 14.2.09: I've added in the metric measurement and simplified the steps. If you use the right size tablespoon and cup, the sauce should be a perfect consistency, thick and creamy.

    This is a meatless (not vegetarian) Borscht, and even my husband, who MUST have meat with every meal, loves this! Sometimes we make it in summer and serve it cold. It's very tasty! It came from a cookbook many years ago, but I can't remember which one. And I've changed it over the years and I do my own thing, there is no need to measure any of the veggies, it always turns out wonderful. So eyeball it! (Your food processor will come in mighty handy for shredding all these veggies!) Enjoy!
