    I hated cooked cabbage when I first tasted this years ago, but then asked in delight, "What is this?" I was hooked! I've been serving it ever since. It's wonderful with pork roast and Waldorf salad. Hope you all enjoy.

    This stuff is FANTASTIC !!! Like Lasagne with Cabbage instead of the pasta. My youngest son doesn't like cooked cabbage but LOVES this. You can also prepare this nicely in a crockpot.

    This is an adopted recipe. It is a delicious, economical, and easy sauce that is wonderful over polenta or pasta. The long cooking gives the cabbage a buttery, caramelized flavor and the bacon is a wonderful smoky compliment to that. From a Good Housekeeping article on meals you can freeze ahead.

So I made a dish based on my "Simmered Leeks" recipe that works so well, and -- let's just put it this way: he changed his mind. He loves it when I make simmered cabbage!     I know this sounds like a strange combination, but it's actually quite good! It's a nice, light salad, with the slightly vinegary taste of the rinsed sauerkraut contrasting nicely against the cool sweetness of the pudding. It tastes similar to carrot and raisin salad. Give it a try!

    This is the only way DH likes sauerkraut any more. We saw it on PBS many years ago. It was a PBS affiliate out of Oregon and I have no idea if it was a German language course for adults or a German cooking show. We watched the next week, but no German program of any kind. The woman cooking had a beautiful voice. Keep the juniper berries and caraway seeds confined. One time I didn't have any cheesecloth and just dumped in the spices. The caraway isn't too bad, but the juniper stays hard and tastes nasty when you bite and they don't get soft, which may be worse. Don't cheat and chop the potato. It has to be grated. It turns creamy and saucy. The potato won't do that if you slice or chop. Put some nice, big sausages or hot dogs on top and heat through and it's a one dish meal.

    Vienna is home to the Naschmarkt, a famous open air market featuring...everything. There is one stand known to anyone who has ever been to the Naschmarkt for its Sauerkraut. If the owner likes you he'll take you aside & ask you how you intend to prepare it & then proceed to tell you the "proper way". I am posting this in response to a request & therefore do not have exact measurements for the soup & wine as I haven't made this since last fall but you really can't go wrong. It is truely authentic Viennese Sauerkraut!(The next time I make this I'll edit to be a little more exact)
