    Bulgarian Dishes

    There is a huge argument going on whether there is any one country on the Balkans that really has a national cuisine. Bulgaria, Greece, the ex-Yugoslavian states, Albania, Romania, and Turkey share so many dishes that the specialists are now claming there is only one Balkan cuisine. No matter, there are lots of regional variants of every dish so here I’m going to try and collect the dishes the way they are being done in Bulgaria. I hope you try and enjoy them.

    This is a very traditional autumn and winter dish here in Bulgaria. It is almost always done at home and probably that is the reason why I find it to be so comforting when I feel down or lonely or homesick. Or, simply, when I want to feel at home.

    This salad is one of the most popular here in Bulgaria. Its name "Shopska" comes from one of the regions of the country (the one surrounding the capital) but it can be found everywhere. And "salata" means simply salad. I hope you enjoy it.

    This cold soup is among Bulgarians favorite foods for the summer. It is served as a first course instead of a salad or between meals as refreshment. You might even see it served in a glass. Most men here say it goes great with a glass of cold rakiya (Bulgarian grape or fruit brandy) or Ouzo.

    This is a Bulgarian classic and my boyfriend’s all-time favorite. He keeps asking me to make it at least once a week. It makes 2-3 servings as a main course and 3-4 as a side dish and I suppose cooking time can be considerably lowered if you use a fryer. I had trouble categorizing it as a Course, and I finally decided to put it under Salads as here it is often sold as a ready-made salad. But if you have better ideas feel free to request a change in category.

    This is a recipe I have not tried yet but I found it in an old book about traditional Bulgarian cooking and it sounded great. I decided to share it so here it is. If you happen to try it, please share how it came out and what kind of cheese you used. By the way, I'm guessing at preparation and cooking times.

    This seems to be quite on the low-carb side. It's supposedly a typical Bulgarian dish again from the Bulgarian National Cuisine cookbook of Zemizdat. By the way I'm guessing at fish quantity because there is a typo in the book and it's missing. Cook time is boiling time for the eggs.

    This is an extremely popular snack food here. Lately it is becoming less popular in cafeterias but it is still a favorite at almost any home. Feel free to alter the condiments but keep the pepper, the onions and the cumin. You could also grate some cheese on top, or add it to the meat mixture.

    Unlike what you might expect, this is one of the easiest dishes in my repertory. In takes time to bake but preparation is a breeze. There are an awful lot of different moussakas that I suppose all originate from different parts of the Balkans. This is the most popular one in Bulgaria and when you order moussaka in a Bulgarian restaurant this is exactly what you are going to get. All others are named after the veggies used -- moussaka with zucchini, with eggplant or vegetarian moussaka (rice and vegetables).

    This is my Mom's variation of the classical Bulgarian Moussaka (which I have also posted). It might have more steps but it's easier to bake. Cooking time includes boiling the potatoes while you fry the chicken.

    Once again one of my boyfriend's favourites. He never gets tired of these meatballs or of my cutlets and he often requests both at the same time. Grilling is also a nice option although you might want to put more beef or more bread so that the mixture gets thicker.
