There is a huge argument going on whether there is any one country on the Balkans that really has a national cuisine. Bulgaria, Greece, the ex-Yugoslavian states, Albania, Romania, and Turkey share so many dishes that the specialists are now claming there is only one Balkan cuisine.
No matter, there are lots of regional variants of every dish so here I’m going to try and collect the dishes the way they are being done in Bulgaria.
