Recieved this online from All Recipes, tried it and loved it. Quick, easy and tasty what more could you want. I made mine to a medium soft egg as we like and topped with fresh salsa and sour cream; but think you could scramble also. I'm going to try freezing the extras for a quick micowave breakfast on those morning we're in a hurry.
I have been working on perfecting the perfect crustless quiche recipe for years. I always use spinach, but I bought some Rainbow Swiss Chard at the local farmer's market today, and I thought I'd give it a try in quiche. I used Rainbow Chard (pink/yellow/white/orange stems---- BEAUTIFUL), but you can use any chard (or try substituting other greens) I do notice that fresh greens give a much better taste than frozen greens though!
I don't know if this is exactly how gramma made her potato pancakes, as I never got the actual recipe. But I remember grating onion for hers so this is a hybrid of my memory and a basic version from Scandinavia.com. I think a major component missing in the online recipe was baking powder. Also, this can be started the night before by grating the potatoes and then covering them with cold water and refrigerating overnight.
Your guests will think they are eating the real thing wih all those calories, but surprise this is full of that flavour but good for your heart.
Add your choice of 2 cups cooked seafood or cooked chicken to the sauce.
This is SO easy & simply delicious! Perfect for guests, as it can be made ahead & placed into the refrigerator or freezer! I like to leave this in the oven on automatic time bake for my family on days when I'll be gone in the morning. Simple - and satisfying! Enjoy!
Don't rate this one as if it were the original version with 30 grams of fat but I do think you'll like it! I LOVE eggs benedict so played around with six different light versions to come up with the best!
I was recently sent a very sweet "We miss you" card from friends that I appreciated very much. The well-wishings were on a card with a lovely country fireside photo of Shumway Mansion’s "Yummy Eggs" and included the quote: "Love and eggs are best when fresh."
