I adapted this recipe from the back of a package of Mr. Dell's shredded hash brown potatoes. This recipe is always requested for Thanksgiving, Christmas and Easter. The best part is, if there are any leftovers, they make a great breakfast side dish the morning after.

UPDATE (10-27-06): I have always purchased Hormell pepperoni, but recently tried an off brand and found that they burned very quickly when I baked them. The length of time for baking will depend on your oven and the pepperoni. You will need to adjust to find the proper time for you...it could be up to 20 minutes.
My Mother-In-Law has been making this for breakfast on Christmas day since I met my Dear Husband and before. It's really wonderful, and we always look forward to brunch at Mom's. This recipe can be changed all about, too. I've used pepper-jack cheese and shrimp, Havarti and crab...We just like it best the way Mom makes it! This goes very well with little sweet rolls, fresh strawberries, juice and coffee.
This casserole is great for holidays or just special days. It's easy, inexpensive to make and taste great.
I normally put all the ingredients together (except the cresent rolls) and let sit overnight in the fridge. This isn't a must, but I'm not a morning person and it saves time the next day.
