I've been looking for a white chocolate and raspberry cookie recipe for ages... This hits the sweet spot. These are soft and fudgy white brownies, dotted with red raspberries. They can be made up to 3 days ahead and stored in an airtight container at room temperature.
This recipe comes the closest to the ones that are sold in the stores. Do not substitute Splenda or other sweetner, the sugar in the recipe carmelizes as the brownies bake, making them more sticky (when I used Splenda, they felt like rubber. On the box vital wheat gluten also appears, I learned that it helps the brownies rise as the batter is rich in sugar. I figure about 1/2-1 teaspoon is enough
* I didn't have yogurt at hand but I had some milk and Jello Sugar Free Fat Free Instant Chocolate Pudding. I made the pudding according to recipe on the box and substituted it cup for cup (I omitted the baking soda because the soda is there to offset the acidity in yogurt, no yogurt= no need for soda). The brownies came out even better!
This is a delicious brownie recipe I found on the IBS message boards. It's so simple to throw together, and you would never guess that it's low-fat and dairy-free! I like the brownies best when they're cool. Yum! They were originally called "Mom's Best Brownies", but I renamed them because I didn't want to imply that this was my mom's recipe!

These are a great treat when you love peanut butter, but don't like all the high-fat versions of bars. They are from a book called Dr. Cookie. I find these very satisfying for a relatively low-fat peanut butter bar.
These are To Die For. A neighbor brought these over for the holidays and I have to tell you, they are addicting!! They are easy to make too, what more could you ask for?? The recipe does not call for it, but I add the zest of 1 lemon and also a glaze on top made with fresh lemon juice and powdered sugar.

I am a HUGE (well, luckily not literally) fan of blonde brownies. So I've been testing/tweaking different recipes for a while. I've finally come up with a recipe that tastes just like I think they should! These are definitely chewy (almost underbaked) with a brown sugar flavor to them.
