These biscuits are baked for Anzac Day (April 25), a memorial tribute to the soldiers killed in World War I. Anzac is an acronym for the combined Australia and New Zealand Army Corps. I love to grill, and even more, I love when the entire meal can be made outside! This is one of those meals.....of course, some rice or bread on the side would be nice, but you can make a full meal out of this. Feel free to switch out the veggies. I like to add onions, especially when the great Vidalias are in season. Prep and cook time does not include the 2 hour marinating time.
These are sandwich cookies, filled with a double filling of raspberry preserves and white frosting. I'd never had these before, so I don't have anything to compare these to. But these are delicious! Cook time is for one sheet of cookies.
I love grilled and broiled beef, but sometimes I have to buy a really tough piece of meat because of the expense. This marinade will make a tough piece of meat enjoyable, as long as you let it soak for at least 8 hours. Great taste, and uses things you normally have in your pantry. Prep time does not include marinating time!!
