Another recipe from the Mayo Clinic website. It's healthy and vegan. Mayo Note: Whip up this frothy cooler in minutes — it tastes like an old-fashioned Creamsicle. For best results, start with ice-cold soy milk and use freshly squeezed orange juice. Creamy, custard-like silken tofu adds extra body. For additional calcium, use calcium-fortified orange juice.
The kids will love these and they are so much better than the store bought junk! It's a fairly simple recipe and you can add whatever dried fruit you want to get a different flavor. And if you're having a chocolate craving, stir in 1/2 c chocolate chips!

Nobody EVER believes what these are actually made of. My dad thought they were cinnamon-carrot muffins with cream cheese icing by the smell and my mom gobbled 3 out of the pan before they were cool enough for me to remove! Regardless, these muffins are REALLY high in both fiber and protein and low in fat which makes them the ultimate breakfast-on-the-go food! Made with fruit rooibos tea as I make them, these muffins also pack a powerful morning antioxidant!
