    One of the early recipes in our household - we like to make single serving babies in 6 inch cast iron skillets because they are sooo pretty when inverted onto a plate (that was what we had from the second hand store - LOL). Gotta have accompaniments (& eaters)ready before pulling them out of the oven though - they come out puffed like a souffle & the center falls fast, leaving a crispy edge & custardy center. Great with thick rashers of bacon & maple or huckleberry syrup (especially when it's really cold out)though others love these with fresh fruit, powdered sugar & whipped or sour cream.

    Morgan Freeman, Oscar Winner, was on the Oprah show and Executive Chef Conny Andersson, of the Beverly Wilshire Hotel, shared his recipe; featured in "Morgan Freeman and Friends: Caribbean Cooking for a Cause". Cookbook is to benefit the island of Grenada, hit by hurricane Ivan, a couple of year's ago. They look scrumptious! Freezing of the ice cream varies with different manufacturer's, didn't include the cooling time of 8 hrs for the carpaccio and refrigerating the batter for at least 1 hour.

    These Moroccan pancakes have a light spongy texture. They are cooked on one side in a griddle or flat earthenware pan so that little holes prick the top & give it the attractive honeycomb appearance. Beghrir is often served with honey & melted butter. This recipe makes a large number of pancakes. They can be stored in the refrigerator for 3-4 days. To cut down on cooking time I use a griddle so I can make several pancakes at a time. If you use fast rising yeast the batter may thicken as it sits. Try making 1 or 2 pancakes & if they seem too thick then add a small amount of water to the batter, a couple of spoonfuls. This should take care of the problem. (The prep time the rest time for the batter.)
