Here's my favorite easy method for perfect poached eggs. Try to use the freshest eggs you can find. Wonderful over toast or serve French style atop a salad, with my Easy Hollandaise Sauce recipe #121586, or in my California Eggs Benedict recipe #455644. I hope you enjoy!

Great hearty rib-sticking meal for breakfast, lunch or supper! Very popular in my household. This is a versatile one-pan recipe-- you can sub or add ingredients as desired-- try ham, mushrooms, tomatoes, or chives. (Note: For an equally delicious simplified version of Bauernfruhstuck using frozen Potatoes O'Brien, please see my recipe #278230). Delicious! P.S. Any leftovers you have make a wonderful breakfast the next day--reheat a few seconds in the microwave (although I've been known to eat this cold), and serve with toast or stuff into a flour tortilla for a quick breakfast on-the-go.

This casserole tastes exactly like Eggs Benedict without the last-minute struggle. Just assemble the English muffins, Canadian bacon (or ham) and eggs like a strata and refrigerate it overnight, then all you have to do in the morning is microwave the Easy Microwave Hollandaise Sauce recipe #121586 to pour on top (I like to double the sauce recipe for this casserole, as it's so yummy!). Granted, the eggs are not poached, but the flavor is just as awesome. Serve Eggs Benedict Casserole with fresh strawberries, orange juice and coffee. Great for Mother's Day, or other morning feast. From the newspaper. Note: Be careful not to overcook. If using a glass dish, you may want to reduce the baking temp to 350 degrees F, or reduce the cook time slightly. Ovens vary.

It is the staple coffee drink of French Louisiana and is often served in bowls (rather than in cups or mugs) in Acadiana. This enticing 'French Vanilla' version of the famous morning or dessert beverage is richly redolent with the wafting scent of real vanilla. Wonderful! An old family favorite comfort food that's delicious served warm at breakfast, or chilled as a special snack. Delicious! For kids of all ages. ;-) Recipe is just as my mother and German Oma made. Enjoy! Serving Suggestion: Top with butter while warm. Enjoy pudding warm or chilled, sweetened to your taste and with fruit toppings of your choice. Quick, easy, tasty, pretty, and healthy too! Enjoy this yummy parfait made with fresh fruit, yogurt, cream, and granola (or muesli) for breakfast/brunch, or as an afternoon snack. This stuff is addicting! I don't remember where I got the recipe, but I have been making this since I was a teenager. The measurements for the oats and coconut are just guidelines; you can adjust it to your liking or what you have on hand. Let me know how you like it.

This is a simple and delicious Mexican version of Green eggs and Ham. Yes, the eggs are green, but if you love salsa verde like I do, this is a good thing! Enjoy! Good with a side of warmed fresh soft tortillas.

One of my family's all-time favorites, we really love this simple old-time version of the Monte Cristo Sandwich! It's great for breakfast, brunch, lunch or dinner. Traditionally dusted with confectioner's sugar, and served with red currant jelly for dipping. You can add a dab of Dijon mustard, if desired. Although this sandwich can be quartered and deep-fried, many of the earliest recipes, like this one adapted from 'The Brown Derby Cookbook' (Doubleday, 1949), call for frying it in a skillet, like french toast.

Tasty toast cups with a hint of maple syrup, an egg, and a tasty surprise of bacon inside. A delicious and fun breakfast or brunch; serve with a cup of coffee or glass of orange juice. Make these in regular muffin cups (or you can use buttered ramekins, but increase the time to about 16 minutes because it takes longer for the heat to penetrate the ramekins).
