These are those breakfast and brunch recipes (casseroles, coffee cakes, and so on) which you might make the night before for a breakfast without a lot of hassle in the morning. The morning after a big holiday dinner, for instance.
This is an easy and tasty hashbrown and ham casserole that's perfect for breakfast, brunch or as a sidedish. You can use either shredded frozen hashbrowns or Southern style (diced) hashbrowns. The french fried onions can be substituted with crumbled potato chips.
This is what we have on Christmas morning. This is a little different than most breakfast casseroles that have been posted here, so I thought I would share. It is very good and I like to keep it special by serving it only this one time a year.
Comforting main or side-dish made rich with tomato pesto and goat cheese and baked in individual casseroles. The original recipe called for twice the butter and whipping cream rather than fat free half and half, so if you can afford the calories, go for it. Oil-packed sun-dried tomatoes (1/2 cup diced) may be substituted for the pesto. Recipe makes 2 main-dish servings or 4 side-dishes.
This wonderful recipe is from The Cheese Lover's Cookbook and Guide by Paula Lambert, adapted slightly cause I want MORE of everything. These scones also freeze beautifully (fully-baked). I individually wrap in double-foil and then breakfast is ready for me when I don't have time to make it.
Simple to make and a good way to use up leftover sour cream as it only calls for 3 tablespoons of it. You can mix and match berries or use all one kind too. Recipe courtesey Killahevlin Bed and Breakfast Front Royal, Virginia
Another lovely cardamom recipe, this one is adapted from the fantastic 'The Great Scandinavian Baking Book' by Beatrice Ojakangas. You can buy cardamom already ground but I prefer grinding it myself in a mortar and pestle, it's much tastier.
